Vegan Banana Bread

Want to use those ripe bananas up before they go bad?

Why not try this banana bread?

This recipe is a favourite in our house. It's "everything a banana bread should be".

It's melt in the mouth, soft and feel good.

​Ingredients;


3 ripe bananas - or you can use as many as you want to make the flavour more or less banana.

75g Veg Oil - or any vegan oil that you have that wont taint the flavour.

100g Caster Suger

225g Plain Flour

3 Heaped tsp Baking Powder

Vanilla Essence - You can add this to taste. I usually use 3 bottle caps full.


Method;

* Preheat the oven to 200°c

* Grease a loaf tin

* Mash the banana, you can do this with a fork. If you are using slightly harder bananas, you can soften them in the microwave for a few seconds.

* Mix the oil and sugar into the bananas.

* Sift the flour and baking powder into the mix.

* Add your vanilla essence and any extra ingredients you may be adding.

* Mix well.

* Pour the mix into the greased loaf tin, smooth the mixture and place in the oven for approximately 20 minutes. Or until you can put a knife into the loaf and it comes out clean.

* Once cooked, leave to cool in the tin for a few minutes and then turn out onto a cooling rack.

Serve warm or cold.

Banana bread taste so good with some cream or ice cream!
