Although there are quite a few ingredients in this recipe is pretty quick and easy to make! Which when you have a toddler is always a bonus! This recipe is sure to impress!
Ingredients
1 tbsp Olive Oil
2 Onions - Finely Sliced
2 Garlic Cloves - Minced
1 tsp Garam Masala
1 tsp Ground Coriander
1 tsp Turmeric
400g Tinned Tomatoes
400 ml Coconut Milk
400g Chickpeas
2 Medium Tomatoes
Handful, roughly 8, Cherry Tomatoes
1/2 Broccoli
3 Carrots - Cut into small cubes
Handful of Spinach
Salt to taste
Basmati Rice to serve
Method
* Heat 1 tbsp olive oil in a large pan.
* Add the carrots and cook until softened. Cook on a medium heat so you don't burn them.
* Add the onions.
* Add garlic, garam masala, turmeric and coriander. Mix and cook for 1-2 minutes.
* Add the tinned tomatoes. Simmer for 10 minutes.
* Add the milk and season. Simmer for 10-15 minutes or until thickened. If it isn't thickening you can add a bit of cornflour to help it along.
* Add the chickpeas, broccoli and tomatoes.
* Cook for 5-10 minutes.
