Elephant Focaccia


I'm sure everyone has seen the floral focaccias, I've even seen some faces but have you ever seen an elephant? This elephant focaccia is pretty easy to make, it looks impressive and it tastes even better!


Originally I was going to make a face, but I quickly realised that I'm no good at faces and it wouldn't look impressive. I thought "I bet I could make an elephant so much easier" and so decided to give it ago and a few minutes later this had been created.


This focaccia is made using courgetter peel, cut thin, to make the outline of the elephant and the details of his face and trunk.

I used red onion to fill in the ears and make the eyes. I also added some courgette in the middle of the eyes but you can't see that against the bread.

I cut the tomato to make the trunk and I cut the bottom of the pepper to make flowers.

I made the face on a chopping board first to make sure I could get it right, I didn't want to risk getting all the veg covered in oil and ripping the dough trying to rearrange it constantly.


I then carefully moved it onto the bread when I was ready.

Elephant Focaccia


Ingredients

1 ⅓ Cup Warm Water

2 tsp Caster Sugar

1 ½ tsp Easy Bake Yeast This is the instant yeast

3 ¾ Cup Plain Flour

¼ Cup Olive Oil + More for Greasing


Topping; These are optional, you can use whatever toppings you would like.

Red Onion

Courgette Peel

Green Pepper

Slice Tomato


Method


Sift the flour into a large bowl.


Mix in the oil


Add the yeast, salt, sugar and warm water.


Mix together to create a dough


Knead for 5 minutes or until your dough is smooth and stretchy.


Oil a clean, large, bowl.


Place the dough inside, cover with a clean tea towel and leave to rise for 1 ½ hours or until the dough is doubled in size.


Preheat the oven 190C


Oil a baking tray 9 ½” x 12”


Use your fingertips to spread the dough evenly across your tray.


Spread a little olive oil over the dough


Carefully place your toppings to look like an elephant; I used courgette peel to make the outline of the face and trunk, I also put a small circle of courgette in between the red onion for the eyes but you can’t see it. Red onions make the eyes and ears, tomato makes the trunk and cut the bottom of the pepper to make a flower


Place foil over the tray This stops the veg from burning while the bread bakes.


Bake for 15-20 minutes or until the bread is slightly browned and the base sounds

hollow when you tap it.


Serve
