If this pandemic has taught us anything it's how important it is to know how to cook! Suddenly people who have never really cooked for themselves haven't had a choice but to cook.

One of the things that has been the hardest to get hold of has been pasta. I hope this recipe for fresh vegan pasta helps everyone; beginnners and experienced.


This recipe is super easy to make; It takes about 10 minutes to make the dough and then you need to put it in the fridge for 45 minutes so that it becomes a little more pliable.


I only wish I had put this recipe up sooner to help anyone that had needed it!

You can make any type of pasta with this recipe; noodles, tagliatelle, lasagne sheets, toterllini and so much more! Check out our pasta page to see the kinds of pasta you can make.


You don't need to have a pasta machine, you can use a rolling pin to roll it out and a sharp knife to cut into shape.

This is what your dough will look like when it comes out the fridge. As you can see it's smooth and not as soft, this means you can roll it and shape it without it being too sticky and falling apart.

I used this recipe to make my tortellini










I also made my Rotolo Di Pasta with this recipe.

Fresh Pasta - Makes enough to serve 4-6


Ingredients


3 Cups Plain Flour

½ - 1 ½ Cups Warm Water

¼ tsp Salt

¼ tsp Turmeric (optional) This is for colour.

1 tbsp + more for greasing Olive Oil


Method


In a large bowl sift the flour, salt and turmeric. Mix to combine.


Add the olive oil into the middle of flour and mix with a fork.


Add the water a little at a time to create a dough. Use your hands to knead into a smooth ball.


Lightly oil a bowl, place the dough inside, cover with cling film and place in the fridge for 45 minutes.


You can now roll this out with a rolling pin or a pasta machine. Thickness depends on what type of pasta you would like to make.

I recommend doing quarter at a time so the dough doesn’t get to dry.


Cut to whichever shape you would like.


To cook;


Boil a saucepan with a little salt.


Once at boiling point, add your pasta and cook for 3-5 minutes.


Serve
