This is a favourite at the pub my husband works at. It's his recipe and the locals can't get enough!
It's a very sickly dessert and tastes very coconutty!
Why not try this with some vegan ice cream!
Ingredients
300g sugar
140g apple sauce
2 tbsp apricot jam
2 tbsp coconut oil
250g plain flour
2 tsp baking powder
2 tsp bicarbonate soda
1/2 tsp salt
2 tbsp apple cider vinegar
120ml vegan milk (I use oat)
Sauce: 112g vegan butter (sunflower) 150g sugar 240ml coconut cream 1 tsp vanilla
Method
* Preheat the oven to 180C and line a square oven dish
* Mix together the sugar, apple sauce, apricot jam, and coconut oil in a large bowl until combined.
* Sieve the flour, baking powder, bicarbonate soda and salt, into the mix and again combine.
* Mix together the vegan milk and apple cider vinegar in a separate jug or bowl and leave to sit for 30 seconds before adding to the rest of the mixture.
* Transfer the batter into a square oven dish. The dish used is 15cm by 15cm.
* Bake for 35 - 40 minutes or until you can put a tooth pick in and it comes out clean.
For the sauce:
* Melt the butter in a saucepan, Add the sugar and coconut cream and simmer until it reaches a syrupy consistency.
* Then take the pan off the heat and add the vanilla.
* Leave to cool slightly before pouring over the pudding.
Serve
