Mini Tomato & Courgette Tarts


These Vegan Tomato & Courgette Tarts are full of fresh flavours and taste delicious.


Tarts are a great addition to your lunch box for work or in a picnic. They are healthy and filling.


This recipe makes 6 tarts, plenty to have for lunch for a few days, or to share with your family. They taste perfect when they are hot and fresh from the oven, or cold the next day.


It starts with a pre baked herby tart base, filled with a chunky tomato sauce and diced onion. It is then topped with thin slices of courgette, artily laid out in a spiral pattern. You will then bake the tart for 25 minutes.


The herbs you use in the base are completely up to you. I chose to use dried basil as I love the flavour and I think it goes great with the tomato sauce.


If you want to make one large tart, you can easily do this; Instead of seperating the pastry into 6 just roll it out to fit a tart tin. Then follow the rest of the steps but combine them into one tart.


Courgette;


Although a courgette is often considered a vegetable it is actually classified as a fruit.


Courgettes are rich in many nutrients, for example, vitamins and minerals.

They are high in antioxidants and contribute to a health digestion.

Courgettes may reduce blood sugar levels, improve heart health, strengthen your vision and could aid in weight loss.

Mini Tomato and Courgette Tarts - Makes 6


Ingredients


Tart Base:

2 Cups Plain Flour

6 tbsp Oil

1 tbsp Dried Basil

4-6 tbsp Water


Filling:

1 Tin Chopped Tomatoes

1 Red Onion

3 Courgette


Method


Preheat the oven to 180c.


Mix together the flour and basil.


Then mix in the oil.


Mix in the water 1 tbsp at a time until you form a dough.


Roll out the dough on a floured surface.


Use a round cutter or bowl to measure out the dough.


Use the dough circles to fill the tart tin. Press the dough into the tin.


Use a fork to prick the base of the tart.


Bake the base for 30 minutes.


While the tart base is baking prepare the filling.


Pour the chopped tomato into a blender and pulse a few times.


Finely dice the onion.


Slice the courgette lengthways into thin strips and cut again down the centre to make thin strips.


When the base has cooked spread about 1 tbsp of the tomato into each tart.


Sprinkle the onion onto the tomato.


Place the courgette in a spiral position starting from the outside and making your way to the centre of the tart.


Bake for another 25 minutes.


Remove the tarts from the tart tins.


Serve
