Vegan Pound Cake

Pound cake is a great recipe to make for several people! It's rich so you don't need a big slice and it goes great warmed up with a bit of cream!


I would definitely recommend this one for a birthday party! It would be a big hit!


Ingredients

3 Cups Plain Flour

1 Cup Cocoa Powder

2 tbsp Baking Powder

2 cups Oat Milk - You can use any milk that you wish for this. Oat milk is our favourite!

1 1/2 Cups Granulated Sugar

170g Yoghurt - You can use cream cheese for this but it doesn't make it quite as creamy. I know how hard it is to get hold of yoghurt, especially if you are like us and can't have soya, that doesn't leave a lot of options.

1 Cup Peanut Butter - If you want your pound cake to taste more peanut buttery you can add more, just remember you may need to add a little more milk to stop the mixture being too thick.

1/4 Cup Oil - You can use any oil for this, I use veg oil.

Vanilla Extract - To Taste

280g Vegan Marshmallows

1 Cup Pecans - You can use walnuts or any other nut of your choice for this.

Method

* Preheat the oven to 180C

* Grease your baking tray

* In a large mixing bowl, sift the flour, cocoa powder and baking powder.

* In a medium bowl combine the milk, sugar, yoghurt, peanut butter, oil and vanilla extract. Mix until creamy.

* Add the wet ingredients to the dry and mix well.

* Mix in the marshmallows and pecans.

* Pour the mixture into your baking tray.

* Bake for 40 minutes or until you can insert a toothpick and it comes out clean.


When the pound cake first comes out the oven you can top it with some extra marshmallows and pecans.


Let cool.
