I was a bit sceptical to try this one but it was definitely worth a try! It tastes quite sweet but it is seriously tasty!
I tested this recipe with my whole family and it was a huge success! Not a single person left anything on their plates! Dad and Hubby are chefs so we’re talking serious taste testers.
I served this on rice and my husband served it with flatbread at his pub. I would also suggest trying it in a bun! You can't go wrong either way!
Ingredients
1 tbsp vegetable oil
1 red onion (small dice)
1 tsp cinnamon (ground)
1 tsp cumin (ground)
2 tsp Smoked Paprika
1 tbsp Vinegar
4 tbsp BBQ Sauce (see recipe)
200g Chopped tomatoes
2 x 400g tins of jackfruit (drained)
Method
* Heat up the vegetable oil in a frying pan and sweat off the onion until very soft. 10-12 minutes.
* Then add the cinnamon, cumin and smoked paprika. 2-3 minutes.
* Followed by the vinegar and BBQ sauce, mix well.
* Add the chopped tomatoes, drained jackfruit and 200 ml of water.
* Cover with a lid and leave to simmer for 30 minutes, making sure to stir every 5-10 minutes (this helps to breakdown the jackfruit).
* Uncover the pan and simmer for a further 10 minutes.
* Using a fork shred the jackfruit and add another tbsp of BBQ sauce for extra thickness.
