Stuffed Munchkins

Do you still have some munchkins or small pumpkins left over? I have still been seeing a few in the shops as well. These stuffed munchkins are the perfect thing to make with your left overs!


This recipe is great because you can stuff munchkins, small pumpkins or even squashes so you can make these all year round!


This recipe serves 3, if you use small pumpkins it will probably be 2


I've stuffed these munchkins with orzo, which is a pasta in the shape of rice.

I used orzo for the first time only a few months ago, and I loved it, so of course I had to find some more recipes to make with it.


You can buy orzo from the supermarket for less than £1 per packet.


This recipe is super easy to make, it only takes about 20-30 minutes to make. These stuffed munchkins are the perfect comfort food, especially on those colder days!


Your children will love the filling as well, even if they don't enjoy the munchkin itself.


The filling is orzo, diced munchkin, pepper, cream cheese and chives. Because it goes in the oven, the cream cheese is melted, which really helps turn this into an amazing comfort food.


Squash (Munchkins & Pumpkins are types of squash)


They are highly nutritious; Packed with vitamin A, minerals, fiber and are low in calories.

The high antioxidant content may reduce risk of chronic diseases and reduce your risk of cancer.

The vitamins in them could help boost your immunity.

Stuffed Munchkins - Makes 3


Ingredients


4 Munchkins - 1 Diced the rest hollowed You can use small pumpkins or squash

100g Orzo

½ Pepper - Diced

200g Cream Cheese

2 tsp Chives - Dried or Diced if using fresh.


Method


Preheat the oven 180C


Place the orzo and diced munchkin in a pot of boiling water. Cook to the orzo packets specifications.


Place the remaining 3 munchkins in the oven for 10 minutes or until they start to soften.


3-5 minutes before the orzo is cooked, add the pepper.


Drain the water from the pot.


Mix in the cream cheese and chives. Season to taste


Fill the munchkins to the top.


Place in the oven for 5-10 minutes or until the munchkins are soft enough to eat


Serve


Enjoy!
