
Strudel is a layered pastry, usually with a sweet filling, it became a popular dish in the 18th Century. We have enjoyed strudel in our family for as long as I can remember, of course I had to make a vegan version.
This summer fruits strudel is the perfect dish for cold or hot days! This dessert will soon become a family favourite!
When I made this strudel, I also made a rhubarb and peach one; The great thing about this recipe is you can make it with any fruits and vegetables that you would like!
My dad's favourite is rhubarb so of course I had to try one using it. Joss suggested I add the peach, it tasted great and will definitely be something I make time and time again.
The rhubarb and peach filling was a little more juicy than the summer fruits, so I added 1-2 tbsp of cornflour to stop it soaking through the pastry too much.
If the juice soaks through too much the pastry wont crisp or might not even cook properly.

Don't be put off by the lattice, it is super easy to do and looks impressive!
All you need to do is cut some slits down both sides of the pastry, make sure you leave enough room for your filling.

Place your filling in the middle of the pastry and then slowly begin to lattice.
Pull one piece over the opposite side, repeat this, alternating sides as you go.
It's that simple!

Strudel
Ingredients
400g Tin Summer Fruits - I also made one with 200g tin rhubarb and 200g tin peach. You’ll also need 1-2 tbsp cornflour.
Ready made Filo Sheets - I used Morrisons Own.
3 tbsp + more for the top Caster Sugar
1-2 Cups Butter
Method
Preheat the oven 180C
Melt some of the butter and spread over one of the filo sheets. Place another one on top and smooth it out.
Repeat this until all of the filo sheets are stuck together. Don’t butter the top.
Use a sharp knife to cut slices into the sides of the filo. Please see pictures for help. Don’t cut all the way through to the middle.
In a small bowl add the summer fruits and sugar. Mix to combine. You can add 1-2 tbsp of cornflour if the mix is looking too wet.
Spread the fruit mix down the middle.
Take one piece of filo from each side and cross them over.
Continue this with all the other pieces to create a lovely lattice.
Use more melted butter to spread over the top of the strudel.
Sprinkle some more sugar over the top
Bake for 10-15 minutes or until pastry has browned and has a crunch.
Serve
