You can eat this hot or cold, it's delicious either way!
I make this flatbread so often. It's quite simple to make and taste so good! It's one of my favourites and I think once you've tried it you will understand why!
Ingredients
1 Cup warm water
1 tbsp Granulated sugar
1 1/2 tsp Active dried yeast
1/2 Cup Sun-dried tomatoes - Finely Diced
3 cloves Garlic - Minced
6 tbsp Oil - plus extra for coating
2 cups Plain flour
Salt - to taste
1 tsp cracked black pepper
6 leaves fresh basil - Finely chopped You can use dried basil but I can't stress enough how much better fresh basil tastes!
Method
* In a small bowl combine the water and sugar, Stir in the yeast and let it sit for a few minutes, until bubbles appear. Mix in the sun-dried tomatoes, garlic and 2 tbsp oil. You can make the sun-dried tomatoes any size you'd like for this. I usually go for reasonably small so I can have a more even bake, however, if you want bigger pieces it wont affect the recipe.
* In a large bowl combine flour, salt, pepper and basil.
* Mix the wet ingredients into the dry. Make sure you mix this in well!
* Turn out the dough onto a lightly floured surface. Knead until the dough is smooth and pliable. Knead into a ball. You can add a little more flour if needed. This is quite a wet dough to begin with, don't let that put you off! Keep working it! You can be quite rough with this dough.
* Lightly coat a large bowl with 1/2 tsp oil. Place the dough into the oil, turning it to coat the whole thing in the oil.
* Cover the bowl with cling film and put in a warm place. You don't want it to be too hot but a warm room is better to get a good rise.
* Leave the dough to rise for 1-1 1/2 hours or until the dough has doubled in size.
* Gently transfer the dough onto a lightly floured surface and knead for 5 minutes.
* Preheat oven 200C
* Line a baking tray with baking parchment.
* Using your fingers spread the dough evenly onto your tray. This gives you quite a lot of freedom, you can choose the thickness of your bread and the shape if you want to mix it up a bit.
* Brush a thin layer of oil onto the dough. If you are worried about it sticking, you can brush oil onto the other side of the bread as well. I have never had any problems with it sticking to the baking parchment though so this shouldn't be needed.
* Bake for 20 minutes or until beginning to brown.
