These Thin Vegan Potato Cakes are deliciously crispy and make the perfect healthy snack!


This recipe makes about 18 small potato cakes, you can use a larger cutter if you prefer larger potato cakes.

This recipe is so quick and easy to make, if you are after a quick healthy snack this is the one for you! The best part is they can be baked in the oven with no oil needed to make them even healthier. If you want to bake them in the oven, prick each one a couple of times with a fork, and then bake at 180c for 10 minutes on each side.


These potato cakes can be enjoyed straight away while they are warm, or later on when they have cooled down. They are best to be kept in the fridge and eaten within two days.

Potatoes are filled with nutrients. They contain lots of vitamins, minerals and antioxidants.

Potatoes may help improve blood sugar control and digestive health.


Potatoes are so easy to put into meals and there is so many things you can do with them. They are usually quite cheap to buy.

Thin Vegan Potato Cakes - Makes 18 Small


Ingredients:

200g Potatoes

120g Plain Flour

2 tsp Herbes De Provence

1-2 tbsp Warm Water

1-2 tbsp Oil


Method


Peel the potatoes and cut them into small pieces.


Boil the potatoes until they are soft then drain the water.


Mash the potatoes while the potatoes are still warm.


Use a fork to mix the flour with the potato.


If the mix is too dry add the water.


Mix in the herbs.


Roll out the mix onto a floured surface.


Use a round cutter, or a glass to cut the shapes out.


Heat oil on medium heat in a frying pan.


Place the potato circles into the frying pan and fry for about 2 minutes on either side or until they are golden brown.


Place the potatoes onto a towel or kitchen roll to soak up the excess oil.


Serve
