This is my version of toad in the hole.
It's seriously tasty and you will not regret trying this.
My husband has no allergies, so doesn't have to be vegan like my daughter and I, luckily he's always up for trying our vegan recipes and has made many of his own. One of the main things he didn't want to give up was toad in the hole so of course I had to find a way to give him that. And he was not disappointed!
Veg in the hole is great because you can use any veg you have in the house, it doesn't have to be the same every time and you can't go wrong with a bit of gravy!
This serves 4 generously and only takes 45 minutes to make total.
Ingredients
2 cups self raising flour
2 cups oat milk
2 cups aquafaba - This is a frequent ingredient in my recipes. It's the water that chickpeas are kept in. You can buy chickpeas for about 35p a tin in supermarkets or in jars in lidls.
Veg of choice - Remember you don't want too many as you don't want too much veg as you don't want to way the Yorkshire pudding part down and not let it rise. I usually go for about 3-4 different vegetables.
Method
* Preheat the oven to 190C
* Cut your veg into small pieces. It's up to you the size you cut these, I usually go for bite size pieces.
* Roast the veg for 10 minutes. Don't forget to coat them in oil.
* Put 2 tbsp of oil in the dish you are making your veg in the hole in, put it in the oven for 5 minutes.
* Pour the mixture into the oil and cook for 5 minutes or until it begins to cook. When you put the mix in you want to hear it sizzle in the oil. If it doesn't, it doesn't mean it wont cook but you will get a better rise if the oil is heated up properly.
* Take the mix out the oven and place the veg evenly in it. The reason we do this is so that the veg doesn't all sink to the bottom and stop the mixture from rising over it.
I've found this is the best way to get the mix evenly in the middle of the dish and to get a good rise on your Yorkshire pudding.
* Place back in the oven for a further 15 minutes or until started to brown.
Serve.
