Vegan Almond & Cranberry Cookies

These Vegan Almond and Cranberry cookies are a great addition to your christmas cooking. They are a delicious sweet treat.


This is a quick recipe to make and will make up to ten crunchy cookies. The combination of flavours go great together, and adds something a little different to the snack table.


These cookies will sink and spread in the oven so you’ll need to keep them spaced apart on the oven tray.


Let them cool after coming out the oven to ensure they harden up to form the great crunch of these cookies.


Almonds;

Almonds are full of lots of healthy fats, protein, magnesium and vitamins.

Eating almonds can lower blood sugar, reduce blood pressure and lower cholesterol levels.

Almonds can reduce hunger, making them great for weight loss.


Cranberries;

Cranberries are full of nutrients; fiber, protein, vitamins and minerals.

Cranberries can help prevent urinary tract infections, prevent stomach ulcers and cancer & they can promote heart health,

Almond & Cranberry Cookies - Makes 10


Ingredients


½ Cup Oil

½ Cup Caster Sugar

¼ Cup Brown Sugar

2 Flax Egg (2 tbsp Flaxseed + 6 tbsp water)

1 tsp Almond Extract

1 ½ Cup Plain Flour

½ tsp Baking Powder

½ tsp Bicarbonate of Soda

½ Cup Oats

¾ Cup Dried Cranberries

½ Cup Sliced Almonds


Method


Preheat the oven to 180c.


Mix together the oil, caster sugar, brown sugar, flax egg and almond extract


Fold in the flour, baking powder and bicarbonate of soda.


Fold in the oats, cranberries, and sliced almonds.


Form balls from the mixture and place on a lined baking tray. Make sure they have space between them as they will spread in the oven.


Bake for 20 - 25 minutes.


Let cool a bit before serving.
