Vegan Almond Salad

Almonds make a great addition in a summer salad. Almonds have lots of great health benefits, including lowering blood sugar levels, reduced blood pressure and lowering cholesterol levels.


Salad is one of my favourite things to eat during the summer. I love to make extra to last for a few days, or to make enough for a family gathering.


I used this salad in a sandwich with the tomato and basil bread rolls I made on the same day as making the almonds salad. It went so well in the sandwich, and the almonds added a small amount of crunch which went great with this salad.

Salads are a great healthy lunch when it's hot, or on the side of your meal. It is also a great addition to a barbeque with your friends or family.


This recipe serves 2, but you can easily adjust it to serve more.


You can choose any lettuce or mixed leaves to go in your salad. I love pea shoots as an addition to a salad. You can buy them in small bags in the supermarket along with lots of other mixed leaves.


This salad only takes a few minutes to whip up. Perfect if you are running late or don't feel like making something time consuming.

Almonds;

Almonds deliver a massive amount of nutrients, protein, fiber, magnesium and are loaded with antioxidants.

Almonds are high in vitamin E; Almonds are one of the worlds best sources of vitamin E.

Almonds can assist with blood sugar control; This is because they are low in carbs and high in healthy fats, protein, fiber and magnesium.

Magnesium also benefits blood pressure levels.

They can lower cholesterol levels.

Eating Almonds reduces hunger, lowering your overall calorie intake. That means almonds are effective for weight loss.

Almond Salad - Serves 2


Ingredients


¼ Cup Cucumber, Cubed

¼ Cup Tomato, Cubed

1 Spring Onion

1 Cup Mixed Salad Leaves - You can choose any lettuce or mixed leave you like. I love pea shoots in a salad.

Flaked Almonds

2 tbsp Fresh Lemon Juice

Ground Pepper


Method


Mix all ingredients together.


Serve


Enjoy!
