Vegan Almond Satay

If you are looking for a super tasty and esay to make dinner, this vegan almond satay is perfect! It's great comfort food, to warm you up on a colder day or grest for date night.


If you love almonds this is the perfect dish for you!


It only takes 20 minutes tops to make this; that makes it a great recipe to whip up after a long day.


To get the almond flavour I have used almond butter, find our recipe here, taste the mix when the butter goes in and if you want more almond flavour you can add more.

To make this vegan almond satay;


You first need to make the sauce.


Add all the ingredients together in a bowl and whisk together to create this super tasty sauce.


Heat the oil in a larget frying pan, add the cauliflower and water.


Place a lid on and cook on a medium heat for 5 minutes.


Add half the sauce and all the pepper.


Mix to combine and let simmer for 1-2 minutes. Stir occasionally to stop it from burning.


Add the cornflour to the other half of the sauce, whisk together to thicken the sauce a little.


Add the last of the sauce to the frying pan and simmer for 1-2 minutes.


Serve with rice.

Almond Satay - Serves 2


Ingredients


1 Small Cauliflower - Cut into small florets

1 Red Pepper - Diced

2 tbsp Olive Oil

2 tbsp Water

1 ½ tbsp Cornflour


Rice to serve


Sauce;

½ Cup Vegetable Stock

2 tbsp Brown Sugar

2 tsp Chilli Flakes

5-6 Garlic Cloves -Minced

3 tbsp Rice Vinegar - You can use a white vinegar.


Method


Mix all the ingredients together in a small bowl until completely combined to make the sauce. Taste the sauce to make sure it tastes almondy enough, add more butter if you want to


Heat the oil in a frying pan.


Add the cauliflower and water, place a lid on the saucepan, cook on a medium heat for 5 minutes.


Add half of the sauce and the peppers into the frying pan, stir to combine.


Let simmer for 1-2 minutes. Stir occasionally to stop it burning.


Add the cornflour to the rest of the sauce and whisk to thicken the sauce a little.


Stir in the rest of the sauce and let cook for 1-2 minutes.


Serve with Rice
