Vegan Apple & Cinnamon Pie

This recipe is one of my favourites, it's perfect for any time of year! Christmas right through to summer.


As some of you may already know, my dad bought a box of Kathy Webbers All-Star Recipe Cards from a car boot sale. We've had them for most of my child hood and it's got some of our favourite recipes in.

I am now, slowly, trying to make them all vegan. I have managed a few of them so far.


This Vegan Apple & Cinnamon Pie is no exception, it tastes amazing and was so easy to make vegan! I can't recommend trying this recipe enough!


When I first started dating my husband, I used to make him this recipe at least once a week. He loved it. He'd eat the whole pie by himself, except the 1 small slice I had.


Now it is a Christmas tradition and I make this pie 3 times at Christmas, as you can tell it is a family favourite too.

Ingredients


225g Plain Flour

50g Butter - I use Pure but any plantbased butter will work

50g Trex - This is vegetable shortening. I buy Trex for less than £1 in Morrisons

450g Apples - Any apples work in this. I've used brambley and granny smiths. It depends on your tastes.

25g Demerara Sugar

1 tsp Cinnamon

1-2 tsp + 2 tbsp Water


Milk for brushing - I use Oat milk but any plant based milk will work.


Method


* Preheat the oven 200C


* Prepare a large pie tin, grease the tin and place baking parchment on the bottom.


* Place the butter and trex in a bowl.


* Sift the flour in.


* Using your fingertips, create a breadcrumb like mix


* Put a little water at a time into the mix. Mix together to create your dough.


* Roll ⅔ rd of the dough out to fit the base of your tin.


* Peel and Core your apples.


* Cut into thin slices. Not too thin. The size is really up to you, my husband like thicked slices, but I like thinner slices. Go with whatever you think is will be perfect for you.


* Cover the apple with the sugar and cinnamon. Make sure all the apples are covered, it makes the flavour even better.


* Place the apples in the pie tin, on the dough.


* Pour 2 tbsp water over the apples.


* Roll the last 3rd of the dough out, to fit the top of the pie.


* Moisten, with some water, the edge of the pastry


* Place the lid on top, use your finger or a fork to press the edges together. I like to use a fork to give it a little extra decoration on the edges.


* Cut the excess dough from around the side of the tin. Use a sharp knife, you don't want it to cut jagged or ruin the dough.


* Make shapes on the top of the pie, with leftover dough, if you would like.


* Brush the top of the pie with milk.


* Bake for 30 minutes. Or until the pie crust is brown and flaky.
