Vegan Apple Crumble Cupcakes

Katie and I love making cupcakes! We were trying to keep the cupcakes interesting and that's how Katie came up with the idea of making these vegan apple crumble cupcakes.


These are very tasty and something i'm sure everyone in the family will enjoy!


I'm sure that your youngsters will love to make these cupcakes with you and decorating them is so much fun!


The recipe is super easy to follow and it creates some great results!

Ingredients


Cupcakes;


1 ¾ Cups Self Raising Flour

1 Cup Brown Sugar

1 tsp Bicarbonate of soda

1 Cup Milk - We use oat milk but any plant based milk will work

2 tsp Vanilla Essence

â…“ Cup Vegetable Oil

1 tbsp Cider Vinegar

1 Cup Small Apple Cubes

1 tbsp Ground Cinnamon


Icing;


200g Butter - We use Pure but any butter will work

400g Icing Sugar

1-2 tsp Cinnamon


Crumble;


1 Cup Plain Flour

½ Cup Butter

1 Cup Caster Sugar


Method


Make the cupcakes;


* Preheat the oven 180C


* In a large bowl, sift the flour and bicarbonate of soda.


* Mix in the sugar


* Add the milk, oil, vanilla essence and vinegar.


* Mix until smooth.


* Cover the apple pieces in the cinnamon. This stops the moisture from the apples leaking into the cupcakes and making it take longer to cook and could ruin the taste.


* Mix the apple pieces in the cupcake mix.


* Fill cupcake cases with your mix. Fill about 3/4s the way up. They will rise a little.


* Bake 20-25 minutes or until a toothpick comes out clean.


* Let cool completely before adding icing.


Make crumble mix;


* Sift the flour into a small bowl


* Add the butter. Rub between your fingertips to make a breadcrumb mixture.


* Add the sugar.


* Spread evenly on a small oven dish.


* Bake for 10-15 minutes. Until the crumble mix has hardened and has browned.


Make the icing;


* Cream the butter.


* Sift in the icing sugar.


* Mix until smooth.


* Add the cinnamon.


* Keep in the fridge until needed.


Assemble;


* Once the cupcakes have completely cooled, pipe the icing on top.


* Sprinkle the crumble mix over the top


Serve
