As some of you may know, I have a 1 year old daughter, almost 2. I'm sure I don't have to tell you how hard it can be to persuade children to eat their food, especially when they are teething.
Because of this I am always looking for inspiring things to make for my daughter, I like a variety of options for each meal. These vegan banana bread muffins make the perfect breakfast or snack, my daughter loves them! She thinks she is eating cake for breakfast and I know she's eating something reasonably healthy.
I like to add extra fruit or nuts in my banana bread muffins sometimes, it makes them extra healthy and gives them even more texture and taste.
If you want to make them more of a dessert you can add some chocolate chips as well.
These banana bread muffins are also great for my husband and I, if we need to have a breakfast on the go or just want a quick, filling snack these are perfect! This recipe makes 12 so they last a few days, I like to do a few with chocolate chips, a few plain and a few with extra fruit and nuts. This keeps them interesting for all three of us.
It's a super easy recipe to follow, it's a great one to make with your kids! You can make them into muffins or you can put the whole lot in a greased loaf tin, just remember the cooking time will be slightly longer for that.

Banana Bread Muffins - Makes 12
Ingredients
3 ripe Bananas
75ml Vegetable Oil
100g Caster Sugar - I use golden caster sugar but normal will work.
225g Self Raising Flour
2 tsp Baking Powder
2 tsp Vanilla Essence
2 tsp Ground Cinnamon - Optional
You can add chocolate chips and/or extra fruit or nuts if you want to make it more of a dessert.
Method
* Preheat the oven 200C
* Prepare a muffin tray with cases.
* In a large bowl, mash your bananas.
* Add the oil and sugar, mix well.
* Sift in the flour and baking powder.
* Add the vanilla and cinnamon. Mix everything together and ensure there is a smooth batter before moving on to the next step.
You can add chocolate chips and/or fruit or nuts here if you are going to use them.
* Fill you cupcake cases ¾ of the way up.
* Bake for 20 minutes or until a toothpick comes out clean.
