Have you got some mini eggs left over? Why not make them a little bowl to sit in! These vegan banana churro bowls taste amazing! I can't tell you how good they taste!
These churro bowls have a lovely banana flavour, we then used vanilla icecream to put in the bowls, with some mini eggs and some hot custard over the top. If that doesn't sounds like the perfect dessert, then nothng will!
For those of you who have been reading my blog for a while may know that churros are one of my favourit desserts! I make them every month or so and I had them almost every day when Katie and I were in Spain. So I was a little sceptical about adding banana too them but it is something I have recommended to my whole family to try! These shocked me with how tasty they were!
Joss found some non-vegan ones online and asked if I would give them a try.
I was very excited to try these as I was looking for some inspiration for some easter things.
Katie and I had discussed finding a way to make little nests for easter and I thought these churros would be perfect.
Because of the fact that the layers aren't visable on the churros, which I pictured, I don't think it really came out looking like a nest for the mini eggs.
It probably would have looked more like a nest if I had left the icecream out but it was calling to me.
Even though it doesn't look much like a nest, I am still very chuffed with this recipe!
I think it's something that kids would love to help with, it does involve using a stove though so it would depend on their age. The little ones could help by getting the ingredients ready for you and help decorate after, I'm sure they would still love this!
I made homemade mini eggs for my easter recipes.
I bought a half egg mould on amazon, it has 15 half eggs. I melted some #moofree chocolate and poured it into the mould.
I then scraped a cake scraper over the top to smooth it out. You could use anything to smooth this out. This is very important because if they aren't smooth they wont fit together.
I then froze them for 30 minutes, till they were solid.
To stick them together you heat up a frying pan, melt one of the halves, just a little, on the flat side and stick two together.
Put them back in the freezer for 10 minutes to let harden properly.
These are really fun to make, they don't take very long and they taste amazing! This is something I know would be fun for the kids to do with you and they'd be so proud of themselves once they are done!
These churro bowls are super easy to make, they only take 10-15 minutes to make and then it's just freezing them and waiting for it to harden.
We put icecream in our bowls but you could put some fresh fruit to make them a little healthier.

Banana Churro Bowls - Makes 8
Ingredients
1 Cup Water
2 ½ tbsp Caster Sugar
2 tbsp Vegetable Oil
3 Cups Plain Flour
2-3 tsp Vanilla Essence
1 Banana - It can be a banana that is starting to brown so you are using them up.
2-3 Cups Vegetable Oil - For Frying
Coating;
½ Cup Caster Sugar
2 tsp Ground Cinnamon
Filling;
Scoop of icecream - We used Oatly vanilla custard that we had put in the freezer to turn into icecream. It tasted amazing!
2-3 Mini Eggs - I made these myself. Please see above to find out how.
We used Oatly custard, heated it up and poured it over our curro bowls. I highly recommend this, it tasted amazing!
You could also use melted chocolate.
Method
Boil the water in a medium pan.
Add the sugar and stir till dissolved.
Add the oil and vanilla essence, stir and then remove from heat.
Sift the flour in and mix to create a dough.
Whizz your banana up, in a separate bowl, to make a smooth puree.
Add the banana into the churro dough. Mix to combine.
Get 8 ramekin dishes, or things of similar size. Cover them in cling film. This is to make sure the churro will come off the pot. If you don't use cling film, it will get stuck.
Transfer the dough into a piping bag, pipe around the ramekin to make a bowl shape. Usually with churros you use a star nozzle, however for the churro bowls it doesn't matter what nozzle you used.
We originally tried used a star nozzle but you couldn't see that we used it, so we just used a round nozzle the next time.
Place them in the freezer for 1-2 hours. Make sure they are solid before taking them out.
Once the churro bowls are solid, pour the oil for frying into a large saucepan.
Heat the oil until when you splash a little water in the oil it sizzles.
Place one of your churro bowls in the oil.
Fry for 3-4 minutes then flip them over and fry for a further 3-4 minutes. It's side will brown.
Take the bowl out and let sit for 10 minutes before coating.
Coating;
Mix the sugar and cinnamon together.
Coat the churro bowls with the mix.
To serve;
Place a scoop of icecream in the center of the bowl. Place 2-3 mini eggs in the ice cream. This makes it like a nest.
We also poured hot custard over ours, it tasted amazing! You could also try chocolate sauce or melted chocolate.
