Vegan Banana Snack Cake

Do you love banana bread and peanut butter? This is the perfect new twist on banana bread! This vegan banana snack cake is soft, flavourful and my new favourite treat!


This recipe is super easy to make, you and your children will love making this together!


It makes 18 bars, you can cut them bigger or smaller if you would like to but I think these are the perfect snack size.


These bars are the perfect treat to send in your child's packed lunch, enjoy in a picnic, or enjoy a well deserved treat.

I put 3 mashed bananas in my cake, I think you can taste the bananas perfectly, but you can add more bananas if you would like an even more banana flavour.


Each bite you take is the perfect combination of banana, chocolate and peanut butter!


Bananas;

Bananas are packed with nutrients and antioxidants.

They can help moderate blood sugar levels, improve digestive health and help aid in weight loss.

Bananas may support heart health and improve kidney health.


Peanut Butter;

Peanut butter is a good source of protein, minerals, vitamins and antioxidants.

It is low in carbs and has healthy fats.


Please do your own research, there is still alot to find out.

To make this vegan banana snack cake;


Preheat the oven 170C and line a 9" square baking tray. If you make the baking parchment hang over the edge of the baking tray, it makes it easier to take the cake out as you can just lift it out.


In a large bowl sift the flour, sugar, cinnamon and bicarbonate of soda.


Add the milk, bananas and oil to the dry ingredients.

You can leave some lumps in the banana for extra texture.


Mix until everything is combined.


Pour the mix into the prepared tin and bake

Let the cake cool before making the topping.


Place the chocolate and peanut butter in a microwave safe bowl.


Microwave for 30 seconds, mix and microwave for a further 30 seconds.


Stir the mix until it has cooled to just slightly warm.



Pour onto the top of your cake. You can let it drip down the side like I did, or you can take care not to let the chocolate reach the edge.


Place the cake in the fridge to let the chocolate set. This should only take a couple of hours.

Once the chocolate has set slice your cake into 18 pieces.


Serve and Enjoy!

Banana Snack Cake - Makes 18


Ingredients


Cake;

1 ½ Cups Plain Flour

¾ Cups Caster Sugar

1 tbsp Ground Cinnamon

1 tsp Bicarbonate of Soda

1 Cup Milk - I used oat milk but you can use any plant based milk.

3 Ripe Bananas - Mashed You can add more bananas if you want a stronger banana flavour

You can leave the bananas slightly lumpy, this is what I do, for a little extra texture.

¼ Cups Olive Oil

1 tsp Vanilla Essence


Topping;

¾ Cup Chocolate - I used Moo Free chocolate but you can use any plant based chocolate.

½ Cup Smooth Peanut Butter


Method


Cake;


Preheat the oven 170C and line a 9” Square baking tin. If you make the baking parchment hang over the edges of the tray slightly, it makes it easier to remove the cake later.


In a large mixing bowl sift the flour, sugar cinnamon and bicarbonate of soda.


Add the milk, bananas and oil to the dry ingredient.


Mix until fully combined.


Transfer the mix to your prepared tin


Bake for 20-25 minutes or until a toothpick comes out clean.


Let cool completely before making the topping.


Top;


Place the chocolate and peanut butter in a microwave safe bowl.


Microwave for 30 seconds, mix and microwave again for another 30 seconds.


Mix gently until the chocolate has cooled to being just slightly warm.


Pour the chocolate over the top of the cake. You can take care to not let the chocolate go over the edge if you like, but I made sure mine did cover the sides.


Place the cake in the fridge until the chocolate has set. This should only take a few

hours.


Once the chocolate has set, remove from the tin and cut into 18 slices.


Serve
