Vegan Basil & Sun-Dried Tomato Crackers


If you are looking for a savoury snack these vegan basil & sun-dried tomato crackers are perfect for all occasions! They make a great snack for on the go, movie night, date night or if you are just a bit peckish.


They are super easy to make and only take about 5-10 minutes to prep and then 15-20 minutes to bake.

I used strong white flour to make these but plain flour or gluten free flour should work.


You can store these in an air tight container for 5-7 days. If they start to go a little stale you can bake them at 100C for 10 minutes or until they crisp again.


I used dried basil to make these crackers, as that's all I had, but fresh basil will always be better.


When my toddler is teething she only wants to eat crackers and cucumber, she loved these. I try to make crackers that I can give her that I know will have some healthy ingredients in them.

Basil;


Basil is a member of the mint family. It is a popular seasoning also used in teas and supplements.


Basil reduces depression related to chronic stress.

It reduces memory loss associated with stress and aging, reduces blood pressure in people with hypertension.

Basil can help to relax blood vessels and thin your blood.

It can prevent certain cancers.

It provides an alternative to antibiotics for infectious diseases.


Sun-Dried Tomatoes;


Sun-dried tomatoes provied vitamin C and K, iron and antioxidants; in particular lycopene associated with lowering risk of certain cancers.

They contribute to heart health by reducing inflammation in blood vessels.

Sun-dried tomatoes help keep your bones strong.

Basil Crackers - Makes Roughly 20


Ingredients

1 ¾ Cups Strong White Flour - You can use Plain Flour too

½ tsp Sea Salt

3 tbsp Olive Oil

½ Cup Water

3 tbsp Sun-Dried Tomatoes Minced - I used the sun-dried tomatoes that are kept in oil, you can use any kind.

3 tbsp Basil - Fresh is Better - I used dried as that's all I have, though fresh is always better.


Method


Preheat the oven to 170C and prepare a medium baking tray.


In a large bowl sift the flour.


Add the salt and mix to combine.


Add the oil, water, tomatoes and basil into the bowl


Stir until fully combined. Try not to overwork it.


Transfer the dough to a lightly floured surface


Roll the dough as thin as possible and as rectangular as possible


Gently transfer this to your baking tray


Using a sharp knife, cut squares roughly 1” You can make them longer or in different shapes if you would like. Remember the bigger/thicker they are the longer the cooking time will be.


Use a fork to prick each square 2-3 times This stops them from growing and curling while they are in the oven.


Bake for 15-20 minutes or until crispy


Serve
