Some of your favourite snacks are getting hard to get hold of at the moment, espeically vegan snacks because they are non essential.
Why not make your own super tasty vegan snacks! This vegan biscotti is so tasty and so fun to make!
When you make this biscotti you will get your hands a bit dirty, make some dough and create something so great.
I was a bit worried making this, it's not until you cut it into pieces you start to see it looking like biscotti and this is right at the end. So hang in there guys, it will come out biscotti I promise and it's so worth the wait!
I made 4 different types of biscotti. I did 1x hazelnut and cocoa powder. 1x hazlenut and vanilla 1 x almonds and cocoa powder and 1 x almonds and vanilla.
I wanted to try them all out and see what worked best. I loved them all!
I made these for a family dinner, to make sure that everyone enjoyed them. My dad, who doesn't like things made with cocoa powder, preferred the chocolate ones. Everyone loved them, and my sister and law said she loved them so much she wanted to take some home with her, she said she doesn't like store bought biscotti so was so surprised to see how much she loved these.
I made 30 in total for my whole family and there were none left after a couple of hours. It made me so happy to see how quickly they were eating. No body had any critacism, if my family have any comments on the things I make they will always tell me; good or bad. I can always trust my family to tell me the truth.
You can of course change the nuts that are used in this and if you want to mix it up you could try different flavours of chocolate, e.g use mint chocolate or orange chocolate for the chocolate chips. I think this would taste so great!

Biscotti - Makes 10-15
Ingredients
1 Cup Plain Flour
1 ½ tbsp Cocoa Powder (optional)
⅓ Cup Almonds or Hazelnuts
⅓ Cup Chocolate Chips
4 tbsp Granulated Sugar
½ Orange Zest
3 tbsp Water
1 tbsp Olive Oil
½ tsp Baking Powder
1-2 tsp Vanilla Essence - You can use more if you want to make vanilla one. Taste a tiny bit of dough to test if you would like more.
Method
Preheat the oven 180C and line a baking tray.
Toast the almonds or hazelnuts for 7-8 minutes, until they are fragrant and golden.
Sift the flour, baking powder and cocoa powder into a large bowl. Add the orange zest and stir gently to combine.
Add the sugar into the very middle of the flour.
In a small bowl mix the oil and water. Pour this mixture on top of the sugar.
Stir the mix from the center, gradually adding more of the flour, until a dough is formed.
Half the almonds or hazelnuts. If using hazelnuts, once they have cooled peel the skin off and discard it, then half the nut. This skin will come of really easily so if you don't take it off it will come off in the biscotti.
Knead in the nuts and chocolate chips.
Divide the dough into 2 logs.
Place the logs apart from each other, onto a baking tray and flatten them gently till roughly 2” wide and ½ “ thick.
Bake for 20-25 minutes. Until the surface is firm to a gentle pressure.
Remove from the oven and remove the temperature to 160C
Let the logs cool on the tray for roughly 10 minutes.
Use a serrated knife and gently slice each log into ½” pieces.
Place the cut side down on the baking tray and bake for another 10 minutes.
Remove from the oven, flip each piece over and bake for another 10 minutes.
Serve
