Vegan Blackbean Brownies



These Blackbean Brownies are so rich and fudgy you wouldn’t even know it contained blackbeans. Perfect for kids who don't like to eat their beans! This is a healthier alternative for anyone with a sweet tooth.


This recipe makes about 6 brownie squares.



Blackbeans are a great source of fibre and protein, as well as providing you with lasting energy. These bars are also naturally gluten free.


This recipe does not contain many ingredients and you will probably have most of them already in the house. It is so easy to make as you basically just blend the ingredients and then cook. I used a hand blender for mine but you can use a food processor if you have one.


This is the perfect dessert to enjoy in the sunshine with some vegan ice cream or with a few strawberries on the side. Alternatively, why not try them warm? Just put them in the microwave for 20-30 minutes. They may get a little crumbly when warm but you can use a spoon to eat them if this happens.

Blackbean Brownies - Makes 6 Squares


Ingredients


1 Tin Black Beans

¼ Cup Cocoa Powder

⅓ Cup Maple Syrup

½ tsp Baking Powder

2 tsp Vanilla

½ Cup Vegan Chocolate Chips


Method


Preheat the oven to 180c.


Blend all ingredients except chocolate chips. You can mash the ingredients if you don't have a blender.


Fold the chocolate chips into the mix.


Pour into a lined baking tray.


Bake for 30 minutes.


Let cool for 20 minutes before serving.


Serve
