Vegan Blueberry & Lemon Scones


As some of you already know, I've been searching for great breakfast recipes! These vegan blueberry & lemon scones make the perfect breakfast, dessert or treat!


These are a great summer recipe! Blueberry and lemon are one of my favourite summer flavour combinations!


These scones are super easy to make. The recipe makes 10, perfect for the whole family to enjoy! Or if you have some friends coming over for some afternoon tea; I'm sure we will all be enjoying afternoon tea with out friends as soon as we are able.

Unfortunately, I haven't quite perfected this recipe yet, the scones grow out instead of up in the oven.

I think they still taste fantastic and they are still super filling, however they don't look as perfect as I would like, yet.


If you would like your scones to rise in the oven you can give them a sleeve. You can use foil for this, just place it around them before you place them in the oven and they should rise nicey.

This recipe is so easy!


You first need to add all the dry ingredients into a bowl, sifting the flour and baking powder first.


You can use flax seeds instead of chia seeds but I love chia seeds. They are so good for you and I love seeing them in my food!


Then add your butter, gently rub the mix between your finger tips to create breadcrumbs.


You then just add the wet ingredients and mix to create a dough.


Add your blueberries, roll your dough and cut your sones out.


Bake your scones for 20-25 minutes and then enjoy them with some jam and cream!


If, like me, you are from Cornwall, don't forget to put the jam on first!

Blueberry & Lemon Scones - Makes 10


Ingredients


2 ½ Cups Plain Flour

1 tbsp Baking Powder

1 tbsp Chia Seeds

½ Cup Granulated Sugar

1 Cup Butter

¾ Cup Milk

1 tsp Vanilla

1 Cup Blueberries

1 Lemon Zest & Juice


Method


Preheat the oven 200C and prepare a baking tray.


If you want to ensure your scones bake up and not out create sleeves for them, you can use foil for this.


In a large bowl sift the flour and baking powder.


Add the chia seeds and sugar. Mix to combine.


Add the butter and use your fingertips to create breadcrumbs.


Add the milk, vanilla, lemon zest and lemon juice. Mix to create a soft dough.


Fold in the blueberries.


Gently roll your dough, on a lightly floured surface, to roughly 1” thick.


Use a round cutter to cut your scones out, place on the baking tray and put your sleeves around them if using.


Bake for 20-25 minutes or until a toothpick can come out clean.


Serve with jam and cream.
