
Vegan Blueberry Oat Biscuits are quick and easy to make and taste delicious!
This recipe makes 6 small biscuits. The mix of the banana with the oats makes this a filling and nutritious breakfast.
Bananas are an excellent source of potassium and supply vitamin B6, fibre and carbohydrate, and some vitamin C. The blueberries add a much sweeter flavour to the mix and they are full of antioxidants and phytoflavinoids, as well as this they are also high in potassium and vitamin C.
Even though these are small biscuits they are quite filling and provide lasting energy all morning.
With only 3 ingredients, this recipe takes only minutes to mix together and 10 minutes to cook. If you don't want to cook the mix you can enjoy a bowl of fruity porridge instead.
If kept covered these will last a couple of days. You could even make them the night before if you think you will be short on time the next morning.

Blueberry Oat Biscuits - Makes 6
Ingredients:
1 Banana
1 Cup Oats
½ Cup Blueberries
Method
Preheat the oven to 180c.
Mash the banana in a bowl.
Mix in the oats.
Mix in the blueberries.
On a lined baking tray, spoon the mixture and flatten into a biscuit shape.
Bake for 10 minutes.
Serve
