Vegan Blueberry Twist Bread

Vegan blueberry twist bread is a great snack or dessert! You just can't go wrong!


I'm always looking for new snacks and desserts for Maxine, my 1 year old daughter! Something that doesn't have too much sugar is always best but not always possible!


Of course Maxine is my most important taste tester but her daddy, Joss, loves to help with the cooking and the tasting!


Every family member that has tried my twist bread has loved it!


What's really great about this recipe is that you can change the blueberry flavour to strawberry or anything you want! Because it's jam it is so easy to change to whatever flavour is the favourite in your house!


Ingredients


450g Plain Flour - You can use gluten free!

21g Dried Active Yeast

3 tbsp Granulated Sugar

200ml Milk - I use oat but any milk will work!

60g Butter - I use pure but any butter will work for this!

1 tsp Salt

200g Blueberry Jam - Or any flavour that you want to use! Strawberry would taste great i'm sure!


Method


* Heat the milk so it is lukewarm.


* Sift the flour into a large bowl.


* Add the yeast and sugar to the flour.


* Stir in 4 tbsp Milk.


* Leave to rest for 15 minutes. This is to make sure the yeast activates!


* Add the remaining milk and butter to the mix to form the dough.


* Knead the dough for 5-8 minutes.


* Place the dough in a lightly oiled bowl and cover with a clean tea towel.


* Leave to rise for 1 hour in a warm place.


* Knead the dough for roughly 8 minutes. You need to knead the dough until it's shiny and smooth!


* Roll the dough into a rectangle.


* Spread the jam over the dough, leaving about an inch border.


* Roll the dough into a log.


* Cut the dough in half, lengthways.


* Keeping the cut facing upwards, twist the two pieces together. The cut needs to be upwards so the jam doesn't spill out! This does make this a little more difficult to do but take it slow! I know you can do it!


* Twist the dough into a ball and place in a greased tin of your choice. Twirl the bread like a cinnamon roll!


* Cover the tin with a clean tea towel and let rise for 40 minutes.


* Preheat the oven to 180C


* Brush the dough, lightly, with milk.


* Cook for 40-50 minutes.


* Let cool before serving.


Serve
