Vegan Brownie Bites

If you are looking for something super tasty to make today? These vegan brownie bites are the perfect sweet treat to make today! It's also a great recipe to make with your kids.


These brownie bites don't require any cooking; just 1 step involves the microwave.


They are super easy to make and only take 5-10 minutes to make and then they just need to be placed in the freezer for 15 minutes.


My toddler loves these brownie bites; they are just big enough, if not slighty too big, for a sweet treat.


You can of course make these smaller so they are bite size if you would like. They probably wouldn't need as much time in the freezer.

To make these vegan brownie bites;


Blend the oats to create a fine oat flour.


Place the syrup and butter in a microwave proof bowl. Mix them together well and then place in the microwave for a minute or until they have melted together.


You can use maple syrup if you prefer.


Place the oat flour, cocoa powder, vanilla and syrup mix into a mixing bowl.


Mix to combine them until a sticky dough is formed, like you can see in the picture above.


Add the chocolate chips and mix them in as evenly as possible. Using your hands makes it easier to spread them evenly.

Scoop a tablespoon of mix out and roll it into a ball.


Place it on your prepared baking tray.


Repeat this with the rest of the mix.


Place them in the freezer for 15 minutes.


Serve and Enjoy!

Brownie Bites - Makes 15


Ingredients

1 Cup Oats

½ Cup Smooth Peanut Butter

â…“ Cup Golden Syrup - You can use maple syrup if you prefer

1 tsp Vanilla Essence

½ Cup Cocoa Powder

½ Cup Chocolate Chips - I used #moofree but you can use any plant based chocolate chips

1-2 tsp Milk - I use oat milk but any plant based milk will work.


Method


Blend the oats to make a fine oat flour


Place the syrup and butter in a small bowl and mix well to combine.


Place in the microwave for 1 minute or until the syrup and butter is melted together


Place the oats, cocoa powder, vanilla and syrup mix into a mixing bowl.


Mix until a sticky dough is formed, add milk if the mix is too dry


Add the chocolate chips and mix them in as evenly as possible. Using your hands helps spread them more evenly.


Prepare a baking tray with baking parchment, make sure it will fit in your freezer


Scoop a tbsp of dough, roll it into a ball and place it on a prepared baking tray. You can make them smaller so they are bite size, they probably wont need as long in the freezer.


Repeat this with the rest of the mix.


Place your tray of brownie bites in the freezer for 15 minutes.


Serve
