Vegan Bunny Pancakes

Happy Easter everyone! I hope that you all have a super day planned! These vegan bunny pancakes are the perfect way to start the day! They are super tasty, quick to make and so fun! The whole family will enjoy them!


When I was growing up my parents did easter egg hunts for us every year, we had so much fun! Sometimes we had little clues and had to follow the clues to the big easter eggs and with every clue was a few little eggs. I can't wait to do that with my daughter!


Here's a little fun fact about me;

I was born on an easter sunday


Pancakes are one of Joss' favourite things, he would never say no to a pancake no matter what time it was or if he'd just eaten a whole cake.


Joss, Maxine and I all loved these bunny pancakes, they are so much fun! And they certainly spice things up! Especially if, like us, you have a pretty standard routine in lockdown.

I don't mean we do everything exactly the same every day.

We have breakfast around the same time and the same thing every day, we walk the dog, play in the garden, have lunch, more time in the garden, dinner, bath and bed. It's pretty standard because we have a 2 year old (almost) and we obviously aren't able to go to the park everyday or go out, like we usually would have.


So these pancakes and the other easter stuff we have made, check out our easter page, have really helped make things a little more exciting, if only for a day or two.


Maxines birthday is coming up in the next few weeks, we had so much planned for her day and my whole family were looking forward to celebrating with her.

Luckily she is only turning 2 so she doesn't fully understand, but we do, and we know that she should be having a big celebration.

Those family members that could, have presents delivered to us so Maxine had a few presents, I will be making a cake (so look out for that) and we will make her day super special for her!

She will be able to look back at pictures and know that we didn't just miss the day because she wouldn't have remembered anyway.


Due to the fact that Maxine is so young and doesn't eat much chocolate we aren't doing an easter egg hunt for her. We were planning to get some decorated eggs, we'd seen some in a few shops, and do a little hunt with those and have it ending with finding one egg but unfortunately we weren't able to get those before we went into lockdown.

We got her an easter egg and so did my parents so she has two big eggs to work her way through.

Bunny Pancakes - Makes 4


Ingredients


250g Self Raising Flour

6 tbsp Caster Sugar

2 tsp Baking Powder

300ml Milk - I use Oat milk but any plant based milk will work

1-2 tsp Vanilla Essence

1 tsp Ground Cinnamon (optional)


Oil to cook


Fruit for the bunny feet and tail - I used apple to make the feet as that's what I had available but you can use any fruit, as long as you can cut shapes out of it.


Method


Sift the flour, cinnamon and baking powder into a large bowl.


Add the caster sugar and mix to combine.


Pour the milk and vanilla essence into the middle of the mix


Mix until smooth.


Heat a little oil in a frying pan.


Pour the mix into the frying pan, making 2 medium sized circles, 2 smaller circles and 2 small ovals. Please see my picture if you need any help with this.


Let cook for 2-3 minutes or until the pancake has started to brown on one side.


Flip the pancake and repeat.


Assemble the pancake into a bunny shape; Place one of the bigger circles over half the other one. Then place the two ovals in place of the ears. Lastly add the two little circles for feet.


Use a small cookie cutter or a knife to cut a small circle for the bunny’s pad and 3 slightly smaller ones for the 3 toes.


Repeat this for the second foot.


Use a small heart shaped cutter to cut out a heart for the tail. Put that in place.


Serve
