Vegan Cabbage Parcels are an amazing dinner or lunch! They are filling and so tasty!
It's a really simple recipe but they look great and are sure to impress!
My 1 year old absolutely loved these!
Ingredients
6 savoy Cabbage leaves
1 ½ cups of rice
4 cups of water
1 vegetable stock cube
1 white onion (diced)
Olive oil
Salt and pepper
4 florets of broccoli
2 small carrots (peeled and small diced)
Method
* Preheat the oven to 190C
* Cook the cabbage leaves in boiling water for about 10 minutes. Remember they are going in the oven to crisp, and they need to wrap around the rice, so you don't want to overcook them.
* At the same time boil the rice in a lidded saucepan using the 4 cups of water with the stock cube for about 12 minutes or until cooked. The stock cube will add an amazing extra taste to the rice.
* Fry the onions, carrots and broccoli in a frying pan to soften before adding to the cooked rice.
* Drain the cabbage leaves and fill with the rice mix and roll them into the parcels. You don't want to fill the cabbage leaves too much as they will be hard to roll up.
Tuck the sides in first and then roll so that the filling doesn't fill out.
You can use a toothpick to hold them together while they cook if you prefer.
* Oil an oven dish before adding your cabbage parcels to it, and placing them in the oven for 15 minutes.
