Vegan Carbonara

When Joss and I first started dating, one of his favourite meals was carbonara. When I went vegan I had to recreate it for him, the thing he was always missing was the bacon. Just recently I made mushroom bacon to finally perfect this vegan carbonara.


This carbonara is perfect! It's an amazing comfort food, great at warming you up on a colder night and it's a fantastic family favourite meal!


This recipe is super easy to make and only takes roughly 20-25 minutes to make.


It isn't the most healthy meal but you have to treat yourself sometimes!


This recipe serves two; perfect for a date night. You can easily double the recipe to serve the whole family.


This recipe goes great with some garlic bread or most other types of bread on the side. Check out our bread page to pick your perfect side.

To make this;


Boil the spaghetti according to the packet.


Add the cauliflower to the spaghetti, it will cook for the same length of time.


While the spaghetti and cauliflower are boiling make the cheese sauce;


Melt the butter in a small saucepan.


Once melted add the flour and mix straight away, this will create a roux.


Add the milk 1/4 Cup at a time, whisk in completly before adding any more.


Keep doing this until it becomes a yoghurt consistancy.


Add the cheese a little at a time. Stir in until melted and then add more.


Taste the mix to make sure it's cheesy enough, add more if you want to.


Season to taste.


If the mix is too thick add a little more milk, if too thin you can add a bit more cheese.

Drain the spaghetti and cauliflower.


Add the mushroom bacon and sweetcorn to this. Mix to combine everything.


Pour the cheese sauce over the top and mix in so everything is completely covered in cheese sauce.


Season to taste


Serve and Enjoy!

Carbonara - Serves 2


Ingredient


Cheese Sauce;

25g Plain Flour

25g Butter

½-1 Cup Milk

½-1 Cup Grated Cheese

1 tbsp Nutritional Yeast


¼ Cauliflower - Cut into small florets

Salt & Pepper to taste

1 Tin Sweetcorn - Drained


100g Spaghetti


Method


Boil your spaghetti according to the packet.


Add your cauliflower to the spaghetti and boil for the same length of time.


While the spaghetti is boiling make the cheese sauce;


In a small saucepan melt the butter.


Once melted add the flour and immediately mix to create a roux.


Add the milk ¼ cup at a time and mix in.


Do this until you have reached the consistency of a yoghurt.


Add your cheese a little at a time.


Mix in until melted.


Season to taste.


Taste the mix to decide if it’s cheesy enough, add more if you want.


If the mix is thicker than you would like add a little more milk.


Drain your spaghetti and cauliflower.


Add the mushroom bacon and sweetcorn to this and mix to combine.


Pour the cheese sauce over the top and mix it in until fully combined.


Season to taste


Serve
