These Vegan Carrot and Apple Cupcakes make the perfect healthy breakfast for when you are on the go.
This recipe makes 12-16 depending on how much you fill the cupcake cases. I thought the cupcakes would rise a little so I didn’t fill the cases to the top. However, they didn’t rise so for the second batch I filled the cases to the top and they came out just as well and cooked at the same amount of time.
This recipe is a great one for anyone trying to eat healthily. There is no added sugar or oil in this recipe, and it is mostly made out of fruit and vegetables.
These are a perfect breakfast or snack as they can be made in advance and kept for up to five days. This is great for anyone who doesn't have time to make breakfast in the morning, or someone who likes to take a snack on the go.
The mixture is made naturally sweet with the mashed banana.
It is up to you if you like more of a smooth cupcake mix, or if you’re like me and like it a bit chunkier. Cut the apples up smaller if you like a bit of a smoother mix.

Carrot & Apple Cupcakes - Makes 12-16
Ingredients
1 Cup Plain Flour
1 Cup Oats
½ tsp Baking Powder
1 tsp Cinnamon
Pinch of Powdered Ginger
1 Flax Egg (1 tbsp Flaxseed + 3 tbsp cold water)
2 Ripe Bananas, Mashed
¼ Cup Vegan Milk
1 Small Apple, Diced
1 Cup Carrot, Grated
½ Cup Walnuts, Quartered
Method
Preheat the oven to 180c.
Mix together the flour, oats, baking powder, cinnamon and ginger.
Stir in the banana, milk and flax egg.
Then stir in the carrot, apple and walnuts.
Spoon the mix into the cupcake cases. Fill each cupcake case to the top as the mixture won't rise.
Bake for 25 minutes.
Serve
