Vegan Cauliflower Bake

Sorry I haven't posted in a while, it's been a busy few months; I've had a teething baby, we've all had a nasty cold, rubbish internet - waiting for an engineer.

Thank you all for having patience with me, hopefully I am back up and running. I already have a few new recipes coming for you guys, this vegan cauliflower bake is just one of the amazing recipes we have coming, so keep an eye out!


This amazingly tasty dish was made by Katie; She made it for the whole family last week, we all loved it!

She found a picture of this dish in a magazine, it didn't have the recipe and you had to pay to see it. Katie found all the ingredients from the picture and made the dish just from her own baking knowledge!

We were all so impressed, it tasted so good! We knew it would but it tasted even better than you could imagine!


This #vegancauliflowerbake is filling, you only need a small portion. My daughter enjoyed it, so we know it's fitting for young children; though if you make it for a child as young as Maxine, almost 2, I would leave the pomegranate seeds out or replace them with something that is less of a choking hazard. Also pomegranate seeds are very sweet, which isn't something my daughter enjoys, but of course it is all down to you as parents knowing what your children like ect.


If you and/or you children aren't huge fans of cauliflower, or you want to mix the dish up a bit, you can easily change the cauliflower for broccoli or you could do half and half. The recipe would work the same and I think would still taste amazing! I'm a huge fan of broccoli so I could happily eat it with every meal!


This recipe is so easy to follow, there is also a youtube video of Katie making this recipe. I highly reccomend you give it a watch, it looks great and shows how easy it is to make and you can truly see how tasty it looks when it's made!

Cauliflower Bake - Serves 6


Ingredients


1 box Paella Rice

1 head Cauliflower - Cut into small florets

1 Cup Pomegranate Seeds

1 Red Onion - Chopped Roughly

¼ Cup Almond Flakes

2 Oxo Cubes

Fresh Dill - Handful


Method


* Boil the whole box of paella rice, following the instructions on the box.


* Boil your cauliflower until just under done and then drain. This takes roughly 5-6 minutes once the water is boiling


* Preheat the oven 170C


Layer in a large dish;


* Rice

* Cauliflower

* Onion

* Pomegranate seeds

* Almond Flakes

* Dill


Bake;


* Bake for 20 minutes.


Serve
