With everyone being stuck inside and the weather now starting to turn a little colder, I thought that everyone would appreciate some comfort food!
This caulifower pizza tastes amazing, is healthy and makes the best meal! It's great for date night, movies or just for you and your kids to enjoy!
This pizza is super easy to make, perfect if your kids want to join in. They will be super proud of how this turns out!
This makes a 10-14" base depending on the size of the cauliflower and the thickness you role it out to be.
You can top this with whatever you would like, it's great if you have some veg that needs to be used up, including the cauliflower you use to make the base. I have written what we topped our pizza with down below.

This is what the dough looks like before you roll it out.
It's soft but not sticky to touch.
Make sure you put baking parchment over the top to roll it out else it will stick to the rolling pin and you wont be able to roll it properly.

This is what the base looks like rolled out and cooked. You can see it has hardened enough to put the toppings on.
As you can see this is quite rough, this is the top of the pizza before you put the baking parchment on it and flip it. Becuase the dough is a little sticky when rolled, when you take the top layer of parchment off to bake it the first time it will be like this.
That is why you flip the pizza over, so the toppings go on the flat side.

This was my pizza once I had topped it before I baked it the second time.
I highly recommend you try these with our garlic doughballs!

Cauliflower Pizza - Makes 10-14" Base
Ingredients
Base;
1 Large Cauliflower - Cut into small florets
1 tbsp Chia Seeds - You can also use flax seeds
2 ½ tbsp Water
2 Cup Strong White Flour - You can use plain if you need to but you may need a little more. Add a little more if the dough is too sticky to roll out.
1 tsp Baking Powder
½ tsp Salt - Sea salt is best but any salt will work.
Toppings - Completely up to you, this is what we used.
Tomato Puree
Sweetcorn
Red Onion
Grated Carrot
Spinach
Grated Cheese
Method
Boil the cauliflower for 20-25 minutes, or until it’s soft enough to mash.
While that’s boiling make a flax egg; mix the water and chia seeds together and set aside until needed.
In a small bowl mix, sift the flour and baking powder. Mix to combine them.
Drain the water from the cauliflower.
Preheat the oven 190C
Mash the cauliflower
Add half the flour into the cauliflower and mix with a fork.
Slowly add the rest of the flour in and knead until you have a smooth dough. If the dough is too sticky you can add a little more flour.
Roll the pizza between two pieces of baking parchment, to make 10” for a thick base or 13-14” for a thinner base.
Remove the top piece of baking parchment, save for later, and place the pizza on a baking tray.
Bake for 10 minutes. The base will have hardened enough to put the toppings on, if it isn't bake it for a few minutes longer.
Remove from the over, place the second piece of baking parchment back on the top of the pizza and flip the pizza over.
Remove what is now the top piece of parchment and top your pizza.
Bake for another 10-15 minutes (depending on thickness) Make sure it isn't stodgy in the middle before you serve.
