Tacos are a great family meal! Children love them because they can fill them themselves! We think the cauliflower filling is the perfect replacment for meat! We just can't get enough of these vegan cauliflower tacos!
When I was growing up we had tacos quite alot. It was a great meal to have in the garden on a lovely summers day or up to the table with the family! Everyone put in what they wanted so noone left anything!
This is something that we still do at family get togethers and of course we will continue to do for Maxine as she grows up!
As i'm sure you all know cauliflower is a very healthy supplement to meat, it has calcium, vitamin c, iron and i'm sure some others! So I was very excited to try it in my tacos, and of course I was not disapointed!
Ingredients
1 Cauliflower - Cut into small florets
Oil to drizzle
1 Pepper - Cut into strips
Chilli - Cut into strips
Tomatoes - Cut into small squares
Cucumber - Cut into small squares
Lettuce - Cut into strips
Red onion - Cut into slices
Salt & Pepper to taste
8 tortillas - soft or hard
Cream Sauce:
200g Vegan Yoghurt
Chilli - To taste (optional)
1 Garlic Clove - cut roughly
1 tsp Lime Juice
1 tsp Vegetable Oil
1 tsp Organic Honey
Salt and Pepper to taste
Method
* Preheat the oven to 200C
* Place the cauliflower on a large baking tray. Drizzle with oil. Add salt and pepper if you would like.
* Cook for 15 minutes or until cauliflower is golden brown.
Sauce
* Place all ingredients in a food processor and combine.
* Assemble your tacos how ever you like! Make sure you get a bit of everything!
