Vegan Cauliflower Tikka

We love curry in our house, my husband especially as he grew up eating alot of curry.

Joss is always looking for new curry recipes to try!


This cauliflower tikka is one that Joss made for us, he fancied curry so he made this one for us. It is so tasty and it's pretty easy to make!

It's very healthy and it's a good cheat one if you don't have alot of time and don't want to make a sauce from scratch. You are still making the sauce but with tikka paste it isn't quite from scratch.


I don't like any heat so Joss leaves the chillies out of my dinner and adds them into his own. It's up to you if you add chillies in or leave them out. They are very much to preference as well, so we haven't written how many to put it on the recipe.

Cauliflower Tikka - 4


Ingredients


1 Small Cauliflower - Cut into florets

½ Broccoli - Cut into florets

1 Red pepper - Diced

1 White Onion - Diced

2 Medium Carrots - Diced

2 tbsp Olive Oil

1 tin Chickpeas - Drained

1 Tikka Paste

1 Tin 500g Coconut Milk

1 Tin 500g Chopped Tomatoes

50 ml Water

You can add chillies to add a little heat if you would like.


Rise to serve


Method


* Heat the olive oil in a large frying pan for about 30 seconds.


* Place the cauliflower, broccoli and carrot in the frying and fry for about 4 minutes.


* Add the onion and pepper. Fry for a further 3 minutes.


* Add the chickpeas.


* Add the tikka paste and 50 ml water. Stir to make sure all the vegetables are covered.


* Stir in the coconut milk and chopped tomatoes.


* Simmer for 15-20 minutes.


Serve with rice and naan bread
