Vegan Cheese & Herb Babka Rolls

These Vegan Herb & Cheese Babka Rolls are a delicious variation on the traditional Babka loaf! This recipe makes 2 large rolls and takes around 2-2 ½ hours to make.


The combination of the herbs with the cheese makes a great savoury snack. Alternatively pair it with some homemade soup! I made this to accompany my homemade Roasted Carrot Soup. They are large enough that that could be cut into slices to side a salad or even made a sandwich.


I decided to make this Babka into rolls as I made a Jam Donut Babka loaf only a few weeks ago and I wanted to try something a little different. If your strips are not quite long enough to make this shape, try stretching the dough very gently as you twirl the two sides.

If after 30 minutes your Babka is not fully cooked through but it is brown on the top, cover it with foil and put it back in the oven for another 10 minutes. 40 minutes should be plenty of time for it to cook all the way through, especially in the shape of rolls as they are thinner than a loaf would be. This is a photo of one of the rolls before I put them in the oven.

The combination of herbs is completely up to you. The ones I’ve chosen are some of my personal favourites, and go very well together. However, you could try using mixed herbs, or just one herb if there is one you like the best.


After sprinkling the herbs and the cheese on the rolled out dough, I used a rolling pin to press the ingredients into the dough. This is because the filling can fall when you're rolling the dough which may cause a build up of the filling in some areas and no herbs and cheese in other areas, so using the rolling pin just helps to keep it all in place when you roll the dough into a log shape.

Ingredients


Dough:

2 ½ Cups Plain Flour

½ Cup Vegan Milk, warm

½ Cup Vegan Butter

3 tbsp Caster Sugar

2 ½ tsp Instant Yeast


Filling:

1 tsp Dry Rosemary

1 tsp Dry Thyme

1 tsp Dry Basil

½ tsp Sea Salt

½ Cup Grated Vegan Cheese


Method


Mix the flour, sugar and yeast in a large bowl.


Add the warm milk and butter.


Knead the dough for 5 mins.


Cover and leave to rise in a warm place for 1 hour.


Preheat the oven to 170c.


Mix herbs together.


When dough has risen, roll it out into a large rectangle.


Sprinkle the herbs and cheese over the dough.


Use a rolling pin to flatten the filling into the dough. This will help it to stick to the dough while you are rolling it.


Roll dough into a log shape.


Cut the log in half lengthways.


Pinch one end together to stop it from coming apart.


Then slowly twirl the two sides together.


Take either end and roll them into the middle.


Cut through the middle of the twirls to form two separate rolls. Tuck the end of the twirls under the rolls. Watch the video above to see how I formed this shape.


Sprinkle a little more of the herb mix and grated cheese on top of the buns.


Bake for 30-40 minutes.


Serve
