Are you running around ragged to try and keep your children entertained? It can be a huge struggle to then make a healthy and tasty dinner, especially when you are knackered.
This vegan cheesy pasta bake is the perfect meal! You can make this in the morning while the kids are able to entertain themselves a little and then you can enjoy it hot or cold in the evening!
This pasta bake is quick and easy to make, the hardest part is the cheese sauce but as long as you follow the recipe you shouldn't have any problems.
The great thing about this pasta bake is you can put anything in it. If you have vegetables that need using up you can add them into it, or add all your favourites to make it an even tastier meal.
When my siblings and I were little my mum used to make us a cheese sauce to persuade us to eat our vegetables. If it was covered in cheese sauce we would eat it, no matter what it was.
I'm still a little bit like that now, I love cheese sauce!
This pasta bake serves 6-8, so if you have a small family you can eat it for lunch or dinner the next day!
I find that I snack on it through the day, it's just tastes so good! I'm not a huge snacker but if I pass the frige I will have a couple of bites. Joss laughs at me because I'll leave a fork in the fridge with it so I can just take a couple of bites and walk away, until the next time.
We sprinkle the nutritional yeast over the top of the pasta bake, however, my brother told me when he makes a cheese sauce he adds the yeast into the cheese sauce to give it a slight nutty taste. He made it sound so tasty and I plan to try it that way, unfortunately this is an auto pilot meal so by the time I remember that was how I was going to make it, the pasta bake is already in the oven.
I highly recommend you try it if you are looking to make a cheese sauce a bit more interesting, or if you are looking for a way to get your kids to eat the nutritional yeast. Lawrence has very good taste so I know he wouldn't stear us wrong.
This pasta bake makes a great comfort food! If you're feeling low or need a pick me up, this will definitely be it!

Cheesy Pasta Bake - Serves 6 - 8
Ingredients
100g Butter I use Flora but any plant based butter will work
100g Plain Flour
1.1lt Milk - I used Oat milk but any plant based milk will work
150g Cheese - Grated - I use Vio life. It's my favourite vegan cheese but you can use any plant based cheese
500g Rigatoni Pasta - You can use a different pasta but this pasta is my favourite for a pasta bake!
2 Medium Carrots - Peeled & Diced
½ Head Broccoli - Cut into small Florets
¼ Head Cauliflower - Cut into small Florets
1 tin Sweetcorn - Drained
You can change which vegetables you use in the pasta bake to whatever your favourites are. If you have any vegetables that need using up you can add those in.
Salt and Pepper - to taste
Handful Nutritional Yeast - You can add more grated cheese on too if you would like.
Method
In a large saucepan melt the butter.
Add the flour and stir to make a thick dough. This is called a rue.
Add the milk 100ml at a time, whisk until it’s incorporated.
Do this until your sauce is a custard like consistency
Add the grated cheese, stir continuously till the cheese has melted.
Add salt & Pepper to your liking.
Take the cheese sauce off the hob.
Preheat the oven 180C
Boil pasta and carrot for 10 minutes.
3 minutes into the 10 add the Cauliflower.
5 minutes into the 10 add the broccoli.
Drain the vegetables and pasta.
Add the sweetcorn and cheese sauce. Mix to combine.
Transfer the mix into a large oven dish.
Sprinkle some nutritional yeast over the top.
Bake for 20 minutes
Serve
