Vegan Chickpea & Tomato Stir Fry


This Vegan Chickpea and Tomato Stir Fry is the perfect meal for the colder summer days. It is a light, healthy meal for the summer but also warming and comforting for the colder weather or on those cosy rainy days.


This recipe makes enough for two, making it the perfect meal for a romantic evening. It is also great to make for yourself and have the leftovers for lunch the next day. It tastes great hot or cold and the leftovers taste fantastic mixed with some fresh salad leaves.


The herbs in the recipe add a great extra flavour into this recipe. I used mixed herbs but if you prefer one herb in particular it will taste great with just one herb.


For a juicer alternative, use tinned tomatoes instead of fresh. This will make the mixture wetter and it will form a tomato sauce throughout the meal.


Chickpeas;

Chickpeas are packed with nutrients, protein and fiber which may help keep your appetite under control; this means they could be good for weight loss.

Chickpeas have many properties that may help manage blood sugar levels.


Tomatoes;

Tomatoes contain around 95% water, the last 5% is mostly made up of carbohydrates and fiber.

Tomatoes are a good source of vitamins and minerals

Tomatoes could help with heart health, preventing cancer and skin health

Chickpea & Tomato Stir Fry - Serves 2


Ingredients:

1 Tin Chickpeas

3 Plum Tomatoes, Diced

1 Red Onion, Diced

½ Yellow Bell Pepper, Diced

1 tsp Mixed Herbs


Rice to Serve


Drain and rinse the chickpeas.


Heat oil in a frying pan over medium heat.


Stir the onion until softened, then stir in the bell pepper.


Add the tomatoes and stir until softened. Squish the tomatoes as they cook.


Stir in the chickpeas and herbs.


Serve with boiled rice
