Vegan Chive Crackers

These Vegan Chive Crackers are a delicious snack! They are perfect paired with homemade hummus! This recipe makes about 20-24 small crackers. These crackers can easily be made gluten free by substituting the plain flour for gluten free flour.


I love making my own crackers because they are so easy and so cheap to make. Crackers are one of my go to snacks at the moment, especially if I have some sort of dip available. Check out our dips here


You can basically make crackers any flavour to suit whatever craving you are having at the time. My favourites are usually herb flavoured. As I had fresh Chive already I decided to make it the main flavour for these crackers.


The dough can be a bit stiff and hard to work with, however this is good, as you don't want the dough to be too wet or sticky. The dough should also not be crumbly as the crackers will not hold together if the dough is too dry.


By rolling the dough between the two sheets of baking paper you are to prevent it from sticking to the rolling pin. Having the baking paper under the rolled out dough also makes it easy to transfer the crackers onto a baking tray, as you can just pick up the sheet with the crackers and place it straight on the tray to go in the oven.

If after 20 minutes your crackers are cooked on the top but are still soft on the bottom try just turning them over on the tray and baking them for another 10 minutes. They will be crispier to eat if you allow them to cool after removing them from the oven.

Ingredients


1 ½ Cup Plain Flour

¼ tsp Baking Powder

2 tsp Flaxseed

1-2 tbsp Chopping Fresh Chive

3 ½ tbsp Oil

3-5 tbsp Cold water


Method


Preheat the oven to 170c.


Whisk dry ingredients together.


Add the oil and mix until crumbly.


Add the cold water 1 tbsp at a time and mix until it forms a dough. You may not need all of the water.


Put your dough onto some baking paper with another sheet of baking paper on top.


Roll out the dough to about 2mm thick.


Remove the top layer of baking paper.


Use a knife to cut the dough into small squares.


Use a fork to push holes into each cracker. The holes do not need to go all the way through.


Transfer the baking paper with the crackers onto a baking tray.


Bake for around 20-30 minutes.


Serve
