
This Vegan Chocolate Chip Cookie Pie is a delicious and “healthy” treat the whole family will enjoy.
This tasty treat is soft and gooey and is perfect hot or cold! It goes great when enjoyed with cream or icecream. You could even try it topped with some chocolate or fruity syrup.

This cake is made with chickpeas and oats, both of which have lots of goodness. Chickpeas are full of vitamins, minerals and fibre. As well as this they are a great source of protein. Oats are also full of vitamins, minerals and fibre. They are also high in antioxidants.
I love finding new recipes made from chickpeas. It is a great way to get extra protein into a vegan diet. They are so versatile, and taste great.
I have also been loving using oats in more recipes recently. They are another great way to add extra goodness into your baking. Oats add a great flavour and different texture to cakes or biscuits.
You can add some protein powder if you are struggling to meet your daily recommended intake. I use pea protien powder but you can use any that you would like.
We used Moo Free chocolate chips to make this but you can use your favourite vegan chocolate.
You can cut the chocolate into chunks if you prefer bigger pieces or you can't get hold of any chocolate chips.

Vegan Chocolate Chip Cookie Pie
Ingredients
2 Tins Chickpeas
1 Cup Oats
3 tbsp Oil - We use vegetable oil but any oil will work.
2 tsp Vanilla
2 tsp Baking Powder
½ tsp Bicarbonate of Soda
1 ½ Cup Brown Sugar
1 Cup Vegan Chocolate Chips - We use #moofree chocolate chips but you can use any vegan chocolate you like.
Method
Preheat the oven to 180c.
Blend all the ingredients together except the chocolate chips. I used a hand blender.
Stir in the chocolate chips.
Pour mixture into a lined baking pan.
Bake for 35-40 minutes.
Serve
