Vegan Chocolate Chip Cookies

Looking for something to entertain the kids? Why not try helping them make these delicious vegan chocolate chip cookies?

Everyone is sure to love these, they taste amazing and they are fun to make! You kids are sure to enjoy making them, and so are you!


This recipe makes 40 cookies so there are plenty for the whole family to enjoy! They don't take long to make, roughly 15 minutes to make the batter and 15 minutes in the oven.


My daughter loves these cookies, especially when she's teething. Even though she's ony almost two, I still let her help me bake when she wants to. I can't wait to do even more baking with her when she's old enough to join in a bit more.I cooked with my parents when I was little, I can't remember a time that I didn't cook with them. This is what gave me my love of baking!


Katie and I have been doing lots of baking, so there will be lots of new recipes for you to enjoy! We are trying to get at least 2 up every day but bare with us, sometimes that's not always possible.


We want to try and make sure you have plenty of recipes to make and enjoy while we are all stuck in isolation, hopefully that will stop everyone from being bored and it's food the whole family can enjoy!

Chocolate Chip cookies - Makes 40


Ingredients


4 Cups Self Raising Flour

1 ¼ Cups Oats - I use cheap oats from the cereal isle in the supermarket, you can usually get them for around 70p

1-2 Cups chopped Chocolate - I used Moo Free chocolate and chopping it into chunks but you can use chocolate chips.

¾ tsp Bicarbonate of Soda

1 ¼ Cup Water

¾ Cup Icing Sugar

1 ¼ Cup Brown Sugar

3 tsp Ground Cinnamon

1 ¼ Cup Vegetable Oil


Method


Preheat the oven 175C and line a baking tray


Sift the flour, icing sugar, cinnamon and bicarbonate of soda into a large bowl.


Add all the other ingredients, except the chocolate, mix until smooth.


Add your chopped chocolate into the mix.


Use a spoon to scoop the mix up, roll the mix slightly into a ball and place on the baking tray. Keep them apart as they will spread a little in the oven. You can make the cookies as big as you would like but I made mine the size of a tbsp.


Flatten them slightly to make a cookie shape. I used my hand to press mine down but you can use a spoon, jar lid or anything else you would like.


Bake for 15 minutes or until the outside is firm but the center is still slightly soft.


Serve
