Vegan Chocolate Fudge Cupcakes

If you love sickly desserts/snacks then this one is perfect for you! These vegan chocolate fudge cupcakes are so sickly that you couldn't have more than 1. They taste so good and are so fun to make! This is definitely one to let your children help with! They will really enjoy these!


I got this idea from one of my instagram followers, theveggievixen, who said she makes chocolate fudge cupcakes, of course using her own recipes.

So I hope you don't mind that I had a go at making them with my own recipes!

It was such a good idea, I couldnt' resist!


To make this recipe I used another Sugar and Crumbs flavoured icing sugar. As some of you may know, I bought some a couple of weeks ago to try. I have previously done a review on the pistachio and cinnamon swirl flavours. Go check that out!


So I'll just give a quick review of this one;

I used Vanilla Fudge flavour. I am completly in love with this one! You can't go wrong with a classic flavour like vanilla!

When you open the bag, you get the lovely smell of vanilla straight away.

The icing sugar is so fine, it's so nice to work with! It's almost like you don't need to sift it.

Best of all, the flavour is amazing! It really pulled these cupcakes together, everyone who tried the cupcakes agreed that this was the best flavour we have tried so far!


I can't wait to give some more ago!

I tried these cupcakes out with the family, as I usually do, and they all loved them! The whole thing came together so nicely and the texture is wonderful, especially with the added fudge pieces!


My dad doesn't like cocoa powder, so I made him vanilla cupcakes. Everything else was the same, except the actual cupcakes.

The recipe is super easy to follow. I think cupcakes are so fun to make, especially with your kids.

Chocolate Fudge Cupcakes - 12


Ingredients


Cupcakes;

½ Cup Milk I use Oat milk but any plant based milk should work

2 tsp Apple Cider Vinegar

¾ Cup Plain Flour

¾ Cup Caster Sugar I use golden caster sugar but regular will work too.

½ Cup Cocoa Powder

1 tsp Baking Powder

½ tsp Bicarbonate of Soda

⅓ Cup Vegetable Oil

⅓ Cup Applesauce

1-2 tsp Vanilla Essence The amount you use is whatever your preference is.


Vanilla Fudge Icing;

220g Butter I use Pure but any plant based butter should work

1 tsp Vanilla (optional)

I used a streak of blue food colouring too.


Fudge pieces;


Method


Cupcakes;


* Preheat the oven 180C and prepare 12 cupcake cases


* In a small bowl mix the milk and vinegar. Set aside for roughly 10 minutes. This makes buttermilk, this gives your baking a softer texture and helps with the rise.


* In a large mixing bowl, sift the flour, cocoa powder, baking powder and bicarbonate of soda.


* Add the sugar.


* Add the wet ingredients into the dry. Mix until smooth.


* Fill the cupcake cases ¾ of the way.


* Bake for 18-22 minutes


* Wait until completely cooled to add icing.


Icing;


* In a small mixing bowl, place the butter.


* Sift the icing sugar in.


* Mix together to create a smooth butter icing


* Add vanilla essence if you are choosing to.


* Place in the fridge until ready to use.


* If you are wanting to add the blue streak of food colouring, before putting the icing sugar in the piping bag, spread blue food colouring onto one side of the bag.


Assembling;


* Pipe your icing onto the top of your completely cooled cupcakes.

I used a circle nozzle but it’s up to you what you use.


* Carefully place your fudge pieces onto the icing, press it in slightly.


* Keep in the fridge until ready to serve.


Serve
