Vegan Churro Donuts

Do you love churros and donuts? Then why not combine them to make churro donuts!

These vegan churro donuts taste amazing! They taste just like churros and have the amazing toppings of donuts, it's the perfect combination!


They are quite heavy, as they are so thick, so you wouldn't want to eat more than 2, they are a bit sickly.


They are the perfect sweet treat for your valentine!

You can decorate these any way you would like, you could put heart sprinkles on them to make them even more special!


Churros are one of my favourite things, so these are the perfect for me!


We made these purley by accident. Joss and I were making churros and we accidently put too much flour in the mix. That made the mix too thick for churros. We were sure we could figure out something to make with it, so we placed it in the fridge while we brain stormed.

Joss thought of turning them into donuts, I wasn't sure because donuts are usually so soft but I was so happy with the results! We had so much fun decorating these together too!

Churro Donuts - Makes 4 Large, 4 Small


Ingredients


1 cup Water

2 ½ tbsp Caster Sugar

2 tbsp Veg Oil

3 cups Plain Flour

1-2 tsp Vanilla Essence


2-3 cup Veg Oil for frying


Icing:

1 cup Icing Sugar

1-2 tsp Water

1-2 tsp Vanilla Essence


Pink Colouring

Toppings of choice - We used melted chocolate and two different types of sprinkles.


Method


* Boil the water in a medium sized saucepan.


* Then add the sugar until it has dissolved.


* Add the veg oil and remove from the heat.


* Sift the flour and mix into the rest of the ingredients. You may need to use your hands to bring the mix together, it is very thick.


* Wrap the dough in cling film, place in the fridge for 30 minutes. This is to help it set a little so it's not too soft for you to roll out.


* In another saucepan heat up the oil for frying, it will need to be about 165C - 175C. Once the oil is the correct temperature, turn the hob down to a medium heat so it doesn't keep getting hotter.


* Once the oil is up to temperature, start rolling out your dough and cutting the rings out. Roll the dough to about 2cm thick.


* Once you have cut out your rings, now it’s time to fry them, try to only do one at a time, as this makes it easier to not overcook them.


* Using a pair of tongs, turn the donuts and cook evenly, take them out when the outside is golden brown, so they don't go too crispy when cooled.


* Let cool completely before decorating


Icing;


* Sift the icing sugar into a small bowl.


* Add the water and vanilla essence. Mix until smooth.


* Add the food colouring. Add a little at a time until you get the colour you would like.


* Decorate the donuts once they have completely cooled.


Serve
