
Cobbler is a fruity dish topped with batter, biscuit or dumpling before being baked. This vegan cobbler is filled with blackberries and apple topped with a soft, cakey, biscuit. How tasty does that sound!
This cobbler serves 4-6 depending on your portion size.
I chose to use apples and blackberries because they are something we can go and pick ourselves, which adds to the fun. You can change the fruit to anything you would like, the recipe will still be the same.
I had never had cobbler before I baked it this time, I was so impressed by how it tastes! It's the perfect comfort food or dish to warm you up on those colder days!
Cobbler is definitely one I will be making many more time!
Blackberries;
Blackberries are packed vitamins, minerals and fiber.
They can help boost brain power.
Blackberries may help protect against heart disease and help prevent some cancers.
Apples;
Apples are very nutritious; They are packed with vitamins, fiber, minerals and so much more.
Apples may be good for weight loss, good for heart health and may help prevent cancer.
They are linked to a lower risk of diabetes.
Please do your own research, there is still so much to find out.

To make this vegan cobbler;
Mix together the apples, blackberries, sugar and cornflour.
Transfer the mix into your chosen dish, roughly 11x7".

Make the topping by mixing the melted butter, sugar, vanilla and milk.
Sift the flour and baking powder into the same bowl.
Mix to create a soft mix.

Spread the mix over the top of the fruit as evenly as possible.
I found it easier using my hands to do this.
Bake for 30-35 minutes

Vegan Cobbler - Serves 4-6
Ingredients
1 ½ Cups Blackberries
1 ½ Cups Apples - Peeled, Cored and sliced small
¼ Cup Granulated Sugar
1 tbsp Cornflour
Top;
½ Cup Melted Butter
¾ Cup Granulated Sugar
1 tsp Vanilla Essence
1 tbsp Milk
1 Cup Plain Flour
1 tsp Baking Powder
Method
Preheat the oven to 179C and grease a dish roughy 11x7”
Place the apples and blackberries in a mixing bowl
Add the sugar and cornflour and mix to combine.
Transfer this to your prepared dish, spreading the fruit as evenly as possible.
Top;
Mix the melted butter, sugar, vanilla and milk together in a medium mixing bowl.
Sift the flour and baking powder into the mixing bowl.
Mix together until you have a thick, soft mix.
Spread over the top of the fruit, evenly. I found this easier using my hands.
Bake for 30-35 minutes or until the topping has browned and crisped.
Serve
