Coconut Milk;
Coconut milk is a very popular alternative to cows milk or cream. It is made from the white flesh of mature brown coconuts.
Coconut milk is made by grated the flesh of the coconut and boiling it in water. It is then strained, in a cheese cloth to create a thick milk.
For a thinner milk the remaining flesh in the cheese cloth is boiled a second time and restrained.
Coconut milk may help with weight loss, body composition and metabolism.
Studies suggest that coconut milk benefits heart health and cholestoral.
Coconut milk may also reduce inflammation, reduce stomach ulcers and fight viruses and bacteria.

1 Cup Light Coconut Milk
2 tbsp + 2 tsp for topping Brown Sugar
½ tsp vege gel You can also use agar agar.
1 tsp Vanilla Essence
Pinch of Turmeric - This adds a little extra colour.
Method
Place all the ingredients in a small saucepan
Turn the heat up to high and continuously whisk the mix until just before it fully boils.
Pour into ramekins
Leave to cool on the side and then place in the fridge to set.
This should only take 2-3 hours
Sprinkle 1 tsp of brown sugar on each creme brulee and heat under a grill or using a blow torch. If you don't have the ability to grill or use a blow torch, sprinkled brown sugar will still taste great. You could leave it off if you prefer.
