Who doesn't love crepes! These vegan crepes are perfect! They are light, large and taste great with anything you put on it!
When I younger we used to look forward to pancake day, my dad made the most amazing crepes!
Pancake day was crepes and pancakes for every meal! For breakfast we had them with fruit, lemon juice and sugar! And dinner we filled them with cheese and whatever we fancied for dinner that night. It was one of the most exciting days as a child!
This is a tradition I can't wait to teach my daughter!
These vegan crepes taste amazing with fruit, lemon juice and sugar. Joss loves them with peanut butter and bananas.
Why not give it ago with homemade chocolate sauce as well!
Melt 1 cup of chocolate and 1/2 cup of coconut milk together. It is so delicious!
These crepes are so easy to make and they only take a few minutes to whip up! My 1 year old loves them for breakfast with some fruit!

Ingredients
2 cups Plain Flour
2 ¼ cups Sparkling Water
1 tsp Baking Powder
1 tsp Lemon Juice
2 tbsp Oil
Vanilla
2-3 tbsp Brown Sugar
1 tsp Chia Seeds
Method
* Place the baking powder, flour, chia seeds and sugar into a large mixing bowl and mix until combined. Make sure you sift the flour and baking powder for a smoother texture.
* Mix the lemon juice, sparkling water, oil and vanilla, into the dry ingredients and mix until you have a smooth batter, before adding the chia mix and again mixing until combined.
* Heat up a little oil in a frying pan on a medium heat.
* Use about ⅓ - ½ cup of crepe batter to each crepe, place the batter in the pan/on the pancake griddle and spread in an outward circular motion, making sure to flip and cook evenly both sides.
* Repeat the above step, until you have used all the batter.
Serve
