Vegan Cupcake Bouquet

If you or your family members birthdays is in April, or this time of lockdown, just like mine, my husbands and my daughters then I'm sure you know the struggle it will be. Joss and I don't mind missing out on our birthdays, we wouldn't have done anything too interesting but we were planning to go out for the day and luckily Maxine isn't old enough to know she is missing out on her birthday.

However if your mother, girlfriend/wife or any family member has a birthday and you want to make it a little more interesting, especially if you couldn't manage to get them a present, why not try making them this super cute cupcake bouquet.


Whoever you make this for will love it! It will make them feel loved and so special in a time where we can't take them to a fancy resturant or do what you would usually do.


You can decorate these cupcakes in anyway you like, I chose to make them look more lolly pops but for those of you that have the correct nozzles could make these look more like flowers.


This recipe is so quick and easy to make, it's a great one to get your kids or younger siblings involved in. If you are a beginner at baking but want to do something super special for your loved ones, this is the perfect recipe!


I think it's super sweet!


You could make just one stem and decorate the cupcakes in a sunflower pattern or similar to your loved ones favourite flower.


Joss and I have been working hard planting flowers in the garden, Maxine is of course helping too. I must have had flowers on the brain but I'm so glad I did because I was very happy with the way these came out!

Cupcake Flower Bouquet - Makes 12 Cupcakes


Ingredients


Cupcakes;

1 ⅓ Cup Self Raising Flour

1 Cup Caster Sugar - I use golden caster sugar but normal will work nicely.

1 tsp Bicarbonate of Soda

1 Cup Milk - I use oat milk but you can use any plant based milk

2 tsp Vanilla Essence

⅓ Cup Vegetable Oil

1 tbsp Vinegar -I use apple cider vinegar but I have used other vinegars and they work too. Try to stick to white, rice or apple cider.


Icing;

500g Cinnamon Icing Sugar - Sugar and Crumbs

220g Butter - I use Flora. I find it is the best butter, it is the only one that holds it's shape and doesn't melt almost instantly

1-2 tsp Vanilla Essence

Pink and orange Food Colouring - You can of course use different colours.


Method


Cupcakes;


Preheat the oven to 180C and prepare you cupcake cases


Sift the flour and bicarb into a large bowl.


Add the rest of the ingredients and mix until smooth.


Fill the cupcake cases about ¾ the way up.


Bake for 15-20 minutes or until a toothpick comes out clean.


Let cool completely before decorating.


Icing;


Sift the icing sugar into a large bowl.


Add the butter and vanilla essence and mix until smooth.


Transfer a quarter of the icing into a small bowl and a quarter into another bowl.


Colour one of the quarters pink and one orange.


Place a bit of cling film on the side, add some of the non coloured icing in a long line. Then do the same with one of the colours. Roll the clingfilm so the two colours roll next to each other, and are touching. When you pipe this out it will combine the too colours to look similar to the pictures. This is one of my favourite techniques, it combines colours and makes them look so lovely!


Repeat this with the other colour.


Cut the end off the cling film and place into a piping bag.


Decorating;


When the cupcakes have completely cooled you can decorate them.


Using whichever nozzle you would like, I used a star and a circle, pipe on your cupcakes in a circular pattern.


Place the cupcakes to look like a large flower; one in the middle and the others around the outside.


You can now add some green paper to make the stems of the flowers or you could make one big flower. You can pipe green butter icing to make the stems or if you are very good you can use the left over cupcakes to make the stem. I would have loved to do either of those for mine but I was trying to be quick as my daughter way coming up to nap time.


Place in the fridge until ready to serve


Serve
