These vegan cupcakes are so great! They are quick and easy to make and a huge favourite of the whole family but in particular my 1 year old.
Vegan snacks and treats can be so hard to find , especially ones suitable for a 1 year old, so of course I make my own.
I would usually coat them with butter icing but at the moment i'm still trying to perfect this. I find that vegan butter is too soft and it just makes the icing melt. As soon as I have perfected that recipe I will post it so everyone else can check it out.

Ingredients
1 ⅓ cups of Plain Flour If you want to make these gluten free you can use the appropriate flour.
1 cup of Sugar
1 tsp of Bicarbonate of Soda
1 cup of Milk I use oat milk but any would work so it's entirely up to you which milk you use.
2 tsp Vanilla Essence
⅓ cup of Vegetable oil
1 tbsp of White Vinegar
Method
* Preheat your oven to 180C
*Prepare your cupcake cases
* Mix together the Sugar and bicarbonate of soda, and sift in the flour.
* Then add the milk, vinegar, oil and vanilla essence to the dry ingredients and whisk until it forms a smooth cake batter.
* Scoop a tablespoon of batter into each of the cases.
* Bake for 20-25 minutes.
Serve
