The weather has started to turn a little colder, so it's time to get some warmer and feel good recipes for you all! This vegan dauphinoise potatoes is amazing! I was surprised at how tasty it was!
This dish is super easy to make and it's the perfect feel good meal!
You can even add extra cheese on top to make it even cheesier.
We dished ours up with a little bread and some salad, you could enjoy this on it's own or with some boile vegetables.

This is what your dish will look like when it's cooked. You then just have to dish it up. This dish serves 6 and if you are having salad and bread you could probably serve a few more.
You could sprinkle some nutritional yeast over the top to give it some added goodness.
My brother likes to put nutritional yeast in his cheese sauces, he says it gives it a little added nutty flavour. So when you layer the cheese you could try sprinkling some of the yeast over it so it melts with the yeast.

Dauphinoise Potatoes Serves 6
Ingredients
1 kg Potatoes - Peeled and very thinly sliced
1 Clove Garlic - Minced
125g Cheese - Grated I use Vio life because it's our favourite but you can use any plant based cheese.
2 ⅓ Cups Milk I use Oat milk but you can use any plant based milk.
30g Butter - 10g for greasing
Salt & Pepper - To taste
Method
Preheat the oven 200C
Grease an oven dish with butter and sprinkle the garlic over the base.
Layer ½ the potatoes in the dish overlapping each one slightly.
Sprinkle ½ the cheese over the potatoes.
Repeat layering the potatoes and sprinkling the cheese.
In a small saucepan boil the milk and remaining 20g of butter with salt and pepper, until the butter is melted and it has reached boiling point.
Pour this mix over the top layer of potatoes until it reaches just below the top layer.
Cook in the oven for 35-40 minutes, until the potatoes are tender.
Serve
